During the summer I love taking our dinner time to a whole new level. I usually have more time to play around in the kitchen during the summer. I’ve recently been going through all our family recipes and stumbles on a Chicken Chicken Cordon Bleu recipe I hadn’t made in some time. It’s made with bacon and cheese on the inside. I had just bought an awesome big package of Wright® Brand Bacon and I thought I should add some more bacon to this recipe. Bacon makes everything awesome, so adding some bacon bits to the top of our Chicken Chicken Cordon Bleu seemed like the perfect addition to the recipe. It’s the perfect dinner meal solution right?! BACON!

Who says bacon has to just be for breakfast?! No sir, you can enjoy breakfast for lunch and dinner!

To spread the bacon love I thought I would share this awesome Bacon Bit Topped Chicken Chicken Cordon Bleu Recipe with you. Everyone should experience this tasty bacon infused recipe!

To Make This You’ll Need:

Ingredients:

  • (2) Chicken Breast
  • (6) Swiss Cheese
  • (6) Wright® Brand Naturally Smoked Bacon Slices
  • 2 Cups Bread Crumbs
  • ¼ Cup of Olive Oil

Just so you know all of these products are available at Walmart and for the amount of thick juicy big slices of bacon that are in one package, it really is a great value for the price I paid at Walmart. It really is bigger better bacon! Everything is better with bacon right?!

Wright-Bacon

Preheat oven to 375 degrees. Flatten the chicken breasts until they are between ¼ inch and ½ inch thick. Lay the breasts flat then lay Swiss cheese slices on until each breast has one fully covered side. Then lay the bacon slices on top of the cheese.

Roll each breast up so that the chicken completely covers the cheese and bacon. If a roll starts to fall apart, use a toothpick to keep roll together.

Lightly cover the chicken rolls in olive oil. Spread out the bread crumbs and cover the chicken rolls in the bread crumbs. Set both chicken rolls in an aluminum covered baking dish. Place dish in oven. While chicken is cooking, slice up remaining bacon slices into small bits.

After 30-35 minutes of the chicken cooking, remove the dish. Sprinkle bacon bits and a little more bread crumbs over the chicken. Return the dish to the oven for another 15-20 minutes.

Remove the chicken from the oven when both the bacon and chicken are no longer pink.

Take out of the baking dish and serve and enjoy!

We paired it with some grilled asparagus and potato salad, which is super yummy together believe it or not.
