DIY Shimmery Snowgirl Cake!

Cheers! Cheers! Rose here and I’m so excited that the holidays are here!!! I know everyone says: “Where did the year go?”, but…where did the year go?!!!!…I don’t really know; however what I do know is that we always celebrate in style and get super excited to share Holiday treats with you. This time we made a shimmery snowgirl cake because they are so cute! My daughter said they are the two of us, so needless to say, she was thrilled to help me decorate it. I think you should make your whole family.

To make this cake you will need:

For the cake:

  • Four 8” layers of your favorite vanilla cake recipe (you may use boxed cake to make it easy on yourself)

For the buttercream (make 2 batches):

  • 4 cups of powdered sugar
  • 3 sticks of butter
  • 2 tsp vanilla
  • 1 tsp milk
  • 1/8 tsp salt
  • Teal and purple gel food coloring
  • Offset spatula (to smooth and even frosting)
  • Pastry scraper

For the Snowgirl cake pops:

  • An 8” layer cake
  • White candy melting chips
  • A small piece of pink fondant for the buttons, earmuffs and tiny hat
  • Multicolor sour belts for the scarf and top of earmuffs
  • Black food writer
  • Lollipop sticks
  • Toothpicks

For the cake topper:

  • White fondant for snowflakes
  • Snowflake cookie cutters in several sizes
  • Disco shakers in Waterfall Blue and Hollogram Silver (online cake supply store)
  • Pearl flakes (online cake supply store)
  • White, light blue and silver candy (jelly beans, gumballs, sixlets)
  • White, light blue and silver sprinkles and sugar
  • Snowflake-shaped sprinkles

The snowgirls are actually cake pops. Crumble a layer of cake with your hands. Add 2 large spoonfuls of frosting and mix with your hands until you get a paste. Squeeze and roll a ball of cake/frosting mixture until you get the desired size. Form different size balls according to the size of the snowman (girl) you need. I did 1 large, 2 medium and 1 small. Freeze for about 20 minutes.

Melt your candy chips in the microwave, according to the package directions, in a medium glass bowl or a large glass liquid measuring cup. Dip the tip of your lollipop stick in the melted candy. Insert it into the cake ball. I actually used two sticks with the largest ball because is too heavy for just one. Dip the ball in the melted candy. Turn the cake pop around slowly to coat it thoroughly and hold it up. Tap your hand gently about 5 times while turning the pop around to get rid of excess candy. Insert stick in a Styrofoam block or cake pop holder if you have one. Let dry for at least 15 minutes.

Once dry, use food writers to draw the face. Roll tiny balls of fondant for the buttons, the tiny hat and earmuffs. I used multicolor sour belts for the scarf and the top of the earmuffs. You can also use fondant for these. I added a snowflake sprinkle on top of the tiny hat. Use melted candy to glue everything. Get creative with these, you can add arms and a broom with pretzel sticks, and make an actual carrot nose with orange fondant. Or you may use actual sprinkles for the eyes and nose.

Snowflakes:

Roll white fondant about 1/8 inch thick. Cut out snowflakes in different sizes. Let dry uncovered for at least 2 days. They must be hard before you start working with them. I left a few snowflakes just plain white, I sprinkle a few with pearl flakes, a few with silver disco dust and a few with light blue disco dust. To apply it, add a few drops of vodka in a small bowl. Brush a bit of vodka so it’s just a little damp on about half the snowflake. Sprinkle glitter or flakes. Repeat until the whole snowflake is covered. Add tiny vodka drops and more glitter in missing areas. Let it dry for 20 minutes.

Glaze:

I used a simple vanilla glaze. Melt the butter and add all ingredients. Whisk until creamy. Add a little bit of milk if is too thick until you get desired consistency. Don’t make it too liquid.

Buttercream:

Mix the butter (at room temp.) with the sugar, milk, vanilla and salt for about 5 minutes. Separate a small batch and add a tiny drop of blue food coloring.

To assemble the cake:

Spread some buttercream in the middle of the cake plate before you put your first layer of cake. Add about ½ inch of buttercream filling between layers. Add a very thin layer of buttercream around and on top of the cake. This is your crumb coat and it will have crumbs. Make it as smooth and as straight as you can, so you can move faster on the next steps. Freeze for at least 15 mins.

Frost the cake with white buttercream as you normally would. Add a few dollops of light blue frosting around it. Add a few tiny dollops of teal and purple gel food coloring around it. With the pastry scraper smooth the cake around no more than 2 or 3 times so that the colors don’t mix too much. This will give it the watercolor effect. To smooth out the cake edges with the scraper, bring it in and clean it every time. Smooth out the top of cake as straight as you can. Chill for about 20 minutes so the buttercream sets.

To decorate the cake:

Make sure the cake is chilled to drizzle it with glaze. Slowly spoon a bit of glaze around the cake and let it drizzle down. Slowly pour the rest of the glaze on the middle and spread it with the back of the spoon to cover the entire top of the cake.

Cut the large cake pop sticks to about half their size and insert on the cake. This is the snowman body. Insert a toothpick onto the middle of the ball. Take out the stick of the snowman head and spread some melted candy around the hole. Insert on the toothpick. Repeat with the second snowman. Attach all accessories with melted candy if you haven’t done so. I arranged both snowgirls to be right in the middle of the cake.

Insert large snowflakes behind snowmen to add a backdrop. I like to alternate colors, but there is no rule here. Since my cake was still chilled, I had to mark where the snowflake would go and then make an incision with a small steak knife. To elevate the middle snowflake, I just added a blob of white fondant and set snowflake on top. Use pieces of fondant to hold the back of large snowflakes. Add the rest of the snowflakes around the cake as you please. Use small toothpicks to hold the pieces on the side of the cake that are not touching the plate. I even inserted them “ninja” style! Use your imagination.

For the most fun part! Sprinkle a tiny bit of disco dust for extra shimmer, add candy and sprinkles as you desire. Bring your kids to help out. They will have a blast!
