Easy Dinner Idea: Margherita Pizza Bake & Confetti Cookie Pizza Recipe!

Chocolate-Chip-Cookie-Pizza-Margherita-Pizza-Bake

Hey All!

I’m so happy to be partnering once again with the fabulous folks over at Betty Crocker. Betty Crocker is awesome at providing Mom’s with quick and easy dinner + dessert combinations that can be made quickly and easily on any weekday. They are pretty tasty combos that I use often. The dinner ideas were selected from Betty Crocker’s robust arsenal of recipes based on options that are family friendly, highest rated, quick and easy. The dessert pairings are meant to compliment the dinner selection, and are equally as quick and easy to bake. The idea behind these combos is to speed up the dinner making process so families can spend more time talking and connecting when there is food on the table. Putting a dessert on the table provides a reason to keep your family at the table a little bit longer (Betty Crocker can help keep your kids at the table a little bit longer). I’m so on board with this idea that I had to try it immediately.

Betty-Crocker-Gift-Basket

Betty Crocker was kind enough to send me a gift basket to get started. It was filled with everything I needed to make an easy and amazing dinner for me and my family.

Betty-Crocker-Ipad-App

It even had this awesome iPad stand that allowed me to look up my favorite Betty Crocker recipes as I cooked.

I decided to rework our Wednesday Pizza Night by making two amazing recipes I found on the Betty Crocker Site which used two of the ingredients we were sent in the gift basket. The main ingredients are Bisquick and a Betty Crocker Chocolate Chip Cookie Mix Pouch.

The recipes I chose to adapt to our liking (aka put my own Brite & Bubbly twist on) are their Impossibly Easy Pizza Bake Recipe and Cookie Pizza Recipe. We don’t really eat Pepperoni so I turned our Pizza Bake into a Margherita Pizza Bake which you can find the recipe for below!

Recipe type: Dinner
Cuisine: American
Serves: 8
Ingredients
  • 3⅓ cups Original Bisquick™ mix (from a 2 lb 8 oz box)
  • 1 cup milk
  • 1 jar (14 oz) pizza sauce
  • 1 package of Basicl
  • 1 bag (8 oz) shredded mozzarella cheese (2 cups)
  • 1 Package of fresh mozzarella cheese
  • 1 Tomato
  • 2 Tablespoons of Minced Garlic
Instructions
  1. Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In medium bowl, stir Bisquick mix and milk until soft dough forms. Drop half of dough by spoonfuls* evenly in bottom of baking dish (dough will not completely cover bottom of dish).
  2. Drizzle about 1 cup pizza sauce over dough. Top with 1 cup of the cheese and 1 tablespoon of minced garlic. Repeat layers with remaining dough, pizza sauce, garlic and cheese.
  3. Then place 5 slices of the fresh mozzarella cheese on the top layer, followed by 4 slices of tomato, and about 7 pieces of basil. This gives it the Margherita Pizza taste and feel.
  4. Bake 25 to 30 minutes or until golden brown, biscuits in center are cooked and cheese in center is bubbly.

It’s super easy to make and it tastes amazing. The instructions to make it are above in the recipe in which you can print out for your reference, but I always like to include images of the ingredients and process as well.

This is something you scoop with a spoon. It’s not like a pizza that you slice.

  • Butter and egg called for on cookie mix pouch.
  • 1 pint vanilla ice cream.

  4. Spread dough evenly in skillet, pressing to flatten and cover bottom.
  5. Bake about 25 minutes or until edges are light golden brown.
  6. Do not overbake; cookie will continue to cook once out of oven.
  7. Cool 5 minutes on cooling rack; cut into eight wedges, and serve warm with scoops of ice cream, chocolate syrup, and sprinkles.

Mix up your cookie dough per the instructions on the Betty Crocker Chocolate Chip Cookie Mix package.

Once it’s completely mixed pour in your sprinkles. We like a lot of sprinkles so I poured in a variety of round and regular sprinkles.

You then place the dough evenly into your skillet so it reaches all the way to the edge of the skillet. You bake it until the edges are golden brown like you see below.

Chocolate-Chip-Cookie-Pizza-4

Let it cool for 5 minutes and then slice into 8 pieces.

Scoop some ice cream on that baby with some chocolate syrup and some more sprinkles and BAM you’ve got one amazing dessert!

Chocolate-Chip-Cookie-Pizza-Main

It’s still warm as you serve it and it tastes amazing! You’re family will love it because it’s colorful and tasty. It’s totally Brite & Bubbly in my book.

Chocolate-Chip-Cookie-Pizza

This dessert you can serve by the slice like a Pizza.

Chocolate-Chip-Cookie-Pizza-3

Since it’s served warm the ice cream will melt a little faster, but it’s beyond amazingly good.

This was a super quick and easy dinner and dessert idea that took hardly any time to make. Dinner only took 40 minutes to make and dessert only took 30 minutes to make. Dessert was honestly more like 25 minutes actually. It’s taken our Pizza Night to a whole new level! I can’t wait until next Pizza night so I can make this again!
