Easy Mini Fruity Pizza Cookies!

Hey All!

Summer is here and that means lots of fun Summer treats. I don’t know about you, but I love me some pizza. I especially love turning some tasty treats into little pizzas like these Easy Mini Fruity Pizza Cookies! They are so refreshing and sweet and they also taste amazing! Who doesn’t love nice fresh fruit in the summer, especially during those Summer picnics and BBQ’s? I know I do! These would also be perfect for those July 4th celebrations.

Here is what you’ll need to make them!

  • Pillsbury Gluten Free Sugar Cookie Mix, with ingredients from box directions.
  • 8 oz. Strawberries.
  • 4-6 oz. Blueberries.
  • 2 Peaches.
  • 2 Kiwi.
  • 8 oz. Cream Cheese.
  • ½ cup Powdered Sugar.

Prepare cookies according to package or your own recipe. I made 10 cookies between 3-4 inches round.

Cut all the fruit into very small pieces and mix together in a bowl.

Mix the cream cheese and powdered sugar and use a plastic baggie to pipe 2 circles onto each cookie, making sure to leave a bare edge to represent the crust.

Place a few spoons of fruit on top of each cookie, making sure to leave a little of the cream cheese showing around the edges.

Serve right away or refrigerate until ready to serve.
