Glam Thanksgiving Pumpkin Spice Cupcakes!

Hey All!

There is a glam Thanksgiving party going on here at Brite and Bubbly, and we are pumpkin spicing it!!!….It’s a Glamkin Spice Party!!! There isn’t a better way to celebrate fall than with these super delicious pumpkin spice cupcakes, cream cheese frosting and edible glitter turkey topper. I kickoff the Thanksgiving festivities with this recipe every year. Even if it’s 100 degrees outside, once I eat one of these, I’m in full fall spirit!

This is what you will need:

For the cupcakes:

  • 3 ¼ cups all-purpose flour
  • 2 tsps baking powder
  • 2 tsps ground cinnamon
  • 1 ¼ tsps ground cloves
  • 1 tsp ground allspice
  • 1 tsp ground nutmeg
  • ½ tsp baking soda
  • ½ tsp fine salt
  • 2 ¾ cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 (15- ounce) can pumpkin puree (not pie filling)

This makes 24 cupcakes. Heat the oven to 350°F and arrange a rack in the middle. Line 2 (12-well) muffin pans with paper liners.   Whisk the flour, baking powder, cinnamon, cloves, allspice, nutmeg, baking soda, and salt in a large bowl to break up any lumps; set aside.

Place the sugar and measured oil in the bowl of a stand mixer with the paddle attachment. Beat on medium speed until the sugar is incorporated, about 1 minute.

Return the mixer to medium speed and add the eggs 1 at a time, beating well after each addition, about 1 1/2 minutes total mixing time. Reduce the speed to medium low, add the pumpkin, and beat until just combined, about 30 seconds. Stop the mixer and scrape down the sides of the bowl and the paddle with a rubber spatula.

Turn the mixer to low speed, slowly add the flour mixture, and beat until almost completely incorporated, about 1 minute. Remove the bowl from the mixer and fold in any unincorporated flour at the edges with a rubber spatula, making sure to scrape to the bottom of the bowl.

Fill the muffin wells three-quarters of the way. Place the muffin pans side by side in the oven and bake for 25 minutes or until a toothpick inserted into the center of the cupcakes comes out clean.

Place the pans on wire racks and let them cool for 5 minutes. Remove the cupcakes from the pans and cool completely on the racks before frosting.

For the cream cheese frosting:

  • 12 oz. cream cheese or 1 ½ packs (not softened)
  • 4 cups powder sugar
  • ¼ cup vegetable shortening
  • ¼ cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • Gold sparkle sprinkles to decorate

Mix all ingredients (except the sprinkles) for about 7 minutes until well combined and soft. Insert in piping bags and chill for about 10 minutes before frosting. Frost the cupcakes, add sprinkles and chill for another 15 to 30 minutes until the frosting is set.

For the glitter turkey topper:

  • White fondant
  • Disco shaker non-toxic/edible glitter (available on-line at sugar arts stores)
  • A few drops of vodka to glue the glitter (alcohol evaporates)
  • Turkey image (click here)
  • Lollipop Sticks

How-To-DIY-Recipes

You will need to do the lollipop backing the day before. Roll a ball of fondant about an inch diameter. Flatten it to ½ inch. Cut off the lollipop sticks if they are too long. They should be about 4” long. Insert stick into the fondant circle. It should look like a lollipop. Make sure the stick is completely covered, if not, add more fondant where the stick is showing. Let it dry overnight.

Roll out the white fondant to a little bit less than 1/8th inch. If you are using decorator’s fondant, let it dry for about 15 minutes so it’s easier to cut. Print and cut your turkey image. Set your image on top of fondant and with a fondant smooth cutter or butter knife, cut around it.

Remember you can always smooth the rough edges with your fingers. Let it dry for 1-2 hours. It must be completely dry and not sticky before the next step. Glue the lollipop backing to the back of the turkey with a brush of water. Put a little bit of pressure so that it sticks.

Be gentle so the turkey doesn’t break. Let it dry for 30 minutes. Make sure it’s completely dry before the next step.

Add a few drops of vodka in a small bowl. Brush a bit of vodka so it’s just a little damp on about a quarter of the turkey. Sprinkle glitter. Repeat until the whole turkey is covered in glitter. Add tiny vodka drops and more glitter in areas missing glitter. Let it dry for 20 minutes.

Insert on frosted cupcakes, take lots of pictures, give thanks for your blessings this year and enjoy!!!
