Avocado Recipes I Want My Kid To Love! #iloveavocados

The world’s first avocado was grown and cultivated in Mexico countless generations ago. Who doesn’t love avocados this time of year? I know I do! Matter of fact I love avocados all year round to be honest! I have a sick obsession with avocado I will admit! I can cut an avocado in half and just throw some salt on it and eat it just like that! I love that avocados can be used to make appetizers to full on meals! They go with a large variety of flavors and I use them a lot in so many recipes.

My family in general loves Avocados, but there is one recipe I have been trying to perfect that I would love my kids to like and it is my “Avocado Egg Rolls”! I love these things! We first heard about them when we went out to eat one time and we all loved them and I have been trying to perfect the recipe at home with my twist on it.

They taste amazing and are the perfect side or appetizer! They are super simple to make and don’t take long at all to make. And I would rather have my kids eating something like these avocado rolls than any junk foods they can get their hands on.

Avocado Egg Rolls!

Serves: 7
Ingredients
  • 1 package of Spring Roll pastry sheets
  • 4 small and not too soft avocados
  • 2 slices of red onion diced
  • ½ cup of sundried tomatoes diced
  • cilantro diced
  • 2 tspns of salt
  • 2 tspns or Pepper
  • 1 pinch of lime juice.
  • half cup of vegetable oil
Instructions
  1. cut avocados into small chunks into a bowl
  2. throw your diced red onion, sundried tomatoes, and cilantro into the bowl
  3. mix it around gently with your hand. You don't want to mush the avocado
  4. drop in your salt, pepper, and lime juice
  5. Mix it some more by hand gently
  6. place two scoops of the mixture onto an egg roll sheet
  7. roll the sheet into the shape of an egg roll and tuck in the edges
  8. Heat the vegetable oil on a low flame
  9. fry your egg rolls until golden
  10. let cool for 15 minutes
  11. cut rolls in half and serve
Again it’s super easy to make and it tastes so good I can eat the whole plate by itself and be happy. My kids in the house are starting to love them as well. I will pry the chips and salsa from their hands and make them eat my avocado rolls instead. I’m sure if you try them you and your kids will hopefully like them too.
