Recently while at the amazing Disneyland Resort, I got to celebrate ¡Viva Navidad! with Pastry Chef Nubia Renteria. She took time out of her busy holiday schedule to show me how to make Sweet Tamales. These amazing tasty treats can be found at the Paradise Garden Grill in Disney California Adventure Park at the Disneyland Resort.
Disneyland Resort recently introduced Disney ¡Viva Navidad! as part of this years Holiday Festivities and dishes like Chef Nubia’s Pineapple and Golden Raisin Sweet Tamales are just one of the New Tasty treats you can find as part of the Holiday Celebrations.
“Disney ¡Viva Navidad!” is a merry celebration inspired by the warmth and joyous spirit of the Latino culture, filled with holiday traditions, jubilant dancing and exciting music. Based in and around the Paradise Garden area of Disney California Adventure, the special activities include crafts and face-painting for children, live Latino music, dance lessons, holiday foods, a “Disney ¡Viva Navidad! Street Party” and, of course, appearances by some popular Disney characters.
Being Puerto Rican I was not familiar with how to make tamales as it’s not a native dish, but I was very excited to learn as we’ve grown to love tamales since we moved to California. I’ve always heard they take a lot of time to make, but Chef Nubia’s recipe for Pineapple and Golden Raisin Tamales was surprisingly very easy to make. These tamales are sweet as they include fresh pineapple and raisins. Normally Tamales have meat inside and they are made out of masa harina and rolled in dried cornhusks. These are made in a similar way, but with a sweet and savory twist.

These tamales are only available until January 6th, 2014 during the Disney ¡Viva Navidad! celebration. You can enjoy additional traditional Mexican dishes like chicken mole, champurrado, and choco flan as well.

We leave for Disneyland on Sunday morning! I can not wait to get my hands on all of these seasonal goodies, especially since we LOVE Mexican food.
