Copycat Galactic Grill American Breakfast Burrito!

Hey All!

Happy Memorial Day and it’s also Goofy’s Birthday and it’s also the day the first Star Wars movie came out in theaters. So technically today is real Star Wars Day! To celebrate ALL of the above we decided to make my veteran hubby a big breakfast in bed. I made him this Copycat Galactic Grill American Breakfast Burrito and some R2-D2 Waffles! I actually made his with out eggs since he’s allergic to eggs. But this is how I ate mine. It’s our favorite breakfast treat at Disneyland and we wanted to do something easy and special for my hubby today.

Here is how to make them! You can easily store these in a freezer and eat them another day as well!

Makes two small versions:

  • 3-4 Whole Eggs
  • 2 Tablespoons of Butter
  • 3 Mini Sausage Patties
  • 10-11 OreIda Mini Hashbrown Coins
  • 2 Slices of Bacon
  • Shredded Cheddar Cheese
  • 2 Four Tortillas (I only had small ones but if you have large sized tortillas use only 1)
  • 1 pinch of salt and pepper
  • Optional Salsa or Pico De Gayo

 

This is beyond simple to make. First you bake your sausages, bacon and hasbrowns at 375 for 15 minutes until crispy and golden brown.

The sausages should be brown and sizzling on the top and bottom. If they aren’t leave for a few more minutes in the oven. I like my bacon very crispy, so I leave it in the oven until it is.

Place the butter in a pan and let it melt on medium heat. Mix the eggs, salt and pepper, and a little bit of cheese in the pan and mix until scrambled eggs are formed.

Once everything is cooked, heat up your tortillas on your stove top and then place everything in the center of a tortilla. Put some cheese and if you want salsa or Pico De Gayo on everything in the center.

Roll up the tortilla like you would a burrito folding in the sides and ends. Cut in half and enjoy!

It’s like being at the Galactic Grill at Disneyland and enjoying this amazing breakfast!

We also made some R2-D2 Waffles using this Waffle Maker since it is Star Wars Day!
