Easy Cinco de Mayo Cheesy Totchos!

I don’t know about you, but my family and I love to celebrate Cinco de Mayo! My husband is part Mexican, so it’s a big holiday for our family. It’s coming up soon and I am thrilled to partner with Old El Paso to come up with a yummy new recipe for our annual family celebration. I knew I wanted to make something that was very cheesy and that my family could have fun eating. I decided to turn our Cinco de Mayo loaded nachos into Cinco De Mayo Cheesy Totchos! You read that right folks. These are tater tots loaded with three kinds of yummy Old El Paso Shredded Cheese and all the fixings of some extra loaded nachos.

In case you didn’t know, Old El Paso has a new line of amazing shredded cheeses that are perfect for Cinco de Mayo recipes.

They come in the following flavors:

Shredded Mexican 4-Cheese Blend, Shredded Quesadilla Cheese, Shredded Monterey Jack, Shredded 3-Pepper Cheese, Finely Shredded Mexican Taco Cheese, and Finely Shredded Cheddar Cheese.

If it were up to me, I would have tried to use all the cheeses in the recipe. I know that’s just too much cheese! I held back! I didn’t want my family to be overwhelmed by all the cheese flavors. I narrowed it down to three flavors that complimented each other perfectly and used those three in my cheesy totchos recipe.

I specifically used the Shredded Mexican 4-Cheese Blend, the Finely Shredded Mexican Taco Cheese, and Finely Shredded Cheddar Cheese in my recipe. Here is the complete recipe below so you can make it for your own families on Cinco de Mayo!

1 Bag of Old El Paso Shredded Mexican 4 Cheese Blend
1 Bag of Old El Paso Finely Shredded Mexican Taco Cheese 1 Bag of Old El Paso Finely Shredded Cheddar Cheese
1 Package of Old El Paso Taco Seasoning
1 Bag of Tater Tots
1⁄2 Pound of Ground Beef
1 Can of Black Beans
1 Jalapeño Pepper
1 Avocado
2 Limes
1⁄2 Teaspoon of salt
1⁄2 Teaspoon of Pepper
1⁄2 Teaspoon of Oregano
1 Tablespoon of garlic powder
1 Container of restaurant style mild salsa
Cilantro for garnish
Cast Iron Skillet

First you add your Old El Paso taco seasoning, oregano, and garlic powder to your ground beef.


You then chop it up with a spatula while it cooks in a skillet and cook it until it’s browned and completely cooked.

Next, you bake your tater tots. I baked mine at 450 degrees for 25 minutes. Once the tater tots and ground beef are done you can begin assembling your totchos.


First, you place the tater tots inside a cast iron skillet and top them with the cooked ground beef and drained black beans.

Next, you top it with the three varieties of Old El Paso shredded cheeses.

Once your tots are completely covered with cheese, you place it in the oven for 4 minutes or until the cheese is completely melted.

Place the hot totcho filled skillet onto an oven mit or trivet and let it cool. Wrap a towel around the handle as well. This will help you move it without an oven mitt once it’s cooled down. Keep it out of the reach of kids and family members until it’s cooled down. The skillet will be very hot when pulled out of the oven.

Once it’s cooled, place some salsa and cilantro on top of the cheese. Cut up some slices of jalapeño peppers and place them on top as well.

Next, you make some guacamole by mashing up your avocado and adding salt, pepper, and lime juice to the avocado. I cut two limes and add as much lime juice as I like. I like my guacamole with a lot of lime, but you can make it to your preference. Add a dollop of guacamole to the center and you’re done!

You can also add sour cream if you’d like. We personally prefer it without, but I know some people love sour cream on their nachos, so they’d love it on their totchos too!

That’s all you have to do to make these yummy cheesy totchos for Cinco de Mayo!
