Hey All!
I know we’re only in July, but before you know it, we’ll be in August and school will be starting soon! Time is flying by! It will soon be back-to-school time and you’ll need some fun and easy lunch ideas to pack for their school lunches. Better get an early start on planning those lunches! Thanks to the amazing folks of my favorite grocery store of all time Ralph’s, I created an easy kid-friendly mini back to school lunch idea for you today! I included one item from each of my favorite parts of the store including the grocery, general merchandise, produce, meat/seafood, and deli/bakery sections. My Ralph’s has the most incredible bakery and deli sections! They are like their own shops with in the store. They even have a dedicated cheese section in the deli section, where you can sample cheeses! I’m obsessed with my Ralph’s!
Ok…I’ll stop raving about my Ralph’s now and get to the lunch idea! I decided to take our traditional sandwich and make them mini this year. I made some cute mini sized turkey, avocado, pesto and cheese sandwiches for one of our back-to-school lunch ideas. They are perfect for small hands and are so much more fun than a traditional sandwich. I decided to use pesto as my family and I tend to love pesto more on our sandwiches, as opposed to traditional condiments like mustard or mayo. I paired it with an apple and some drinkable yogurts.
I then packed them inside some Ralph’s brand sandwich size storage bags, which I drew some cute faces on with a marker to make it look like each sandwich has a little face on it. It’s a simple lunch idea with a fun little twist. Who doesn’t love everything mini? I know I do and your kids will too!
If you want to make this lunch for your kids for back-to-school time, here is what you’ll need to make it!
- From the Grocery Section: Drinkable Yogurts.
- From the General Merchandise Section: Food Storage Bags.
- From the Produce Section: Apples and Avocados.
- From the Meat/Seafood Section: Packaged Turkey Deli Meats.
- From the Deli/Bakery Section: Cheddar Cheese, Swiss Cheese, and Turkey.
- Pesto. (You can buy some in Ralph’s or make your own.)
- Whole grain bread (Or any bread you prefer).
- Mini Bread Shaped Cookie Cutter.
- Marker.
- Lunch Bag.
First you take your mini bread shaped cookie cutter and cut out mini sized pieces of bread. You’ll cut them out of your whole grain bread slices. Cut two pieces for each mini sandwich you plan to make.
Once all your breads are cut to mini size, add a little bit of pesto to each side of the bread. Take some of your packaged turkey deli meats and place it on one slice of bread. You then take your deli section turkey and place it on the other side of bread. Why use two different kinds of turkey in the sandwich you ask? We love to combine the different flavors that fresh from the deli and packaged deli meats have. Like we’ll get some packaged smoked turkey and some fresh deli cut turkey and combine them in a sandwich.
I then add the cheddar and swiss cheese and avocado to the sandwich sides.
Put both sides of the sandwich together and you’re done!
Place each little sandwich in a sandwich storage bag and draw little faces over each little sandwich. It makes them look like little kawaii sandwiches and super cute.
Let the marker dry completely and then place it into your lunch bags.
How cute are those little faces folks? Love them!
To complete your child’s lunch, add an apple…
Some drinkable yogurts, like these drinkable yogurts…
And any other treats you’d like to include with your kids lunch and you’re done! Be sure to include some school pick me up napkins or a little lunch note to raise your child’s spirits as well.
Your child will love having some mini sandwiches their little hands can easily grab for lunch.
I hope you enjoy this fun and easy back-to-school lunch idea as much as I do!
