Easy Rainbow Whoopie Pies!

Hey All!

Happy Monday and what a weekend it was! Seeing the Eagles win was just beyond incredible. I’m not even a football fan and I enjoyed that game! It just made me say whoopie! Since whoopie was on my mind, I decided to whip up some super Easy Rainbow Whoopie Pies! I of course couldn’t just make regular whoopie pies, I had to make rainbow one because everything is better in rainbows. Am I right? I mean who doesn’t love a tasty rainbow treat? I know I do!

Here is how to easily make them!

  • 1 Box White Cake Mix
  • 1 Container Whipped White Frosting
  • 1 Egg
  • 1 Stick Butter, softened
  • Food Coloring
  • Rainbow Pareils Sprinkles

First you preheat oven to 350 degrees. You then combine the cake mix, egg, and butter in a medium bowl. Beat the ingredients together until batter is well mixed.

With a spoon, gently stir in the sprinkles, adding as many as you would like. Roll into about 1-inch balls and place on a cookie sheet. Lightly press the dough down about halfway with the bottom of a cup, and bake for 8-10 minutes. Remove from oven and cool completely.

Divide the frosting and mix in 3 or 4 colors of your choice. Place each color of frosting into a plastic baggie, and snip the corner off to use for piping.

Pipe a round mound of frosting on the bottom of one half and gently press another half on top of it. Repeat this until all the halves are frosted and topped with another half.

That’s all you have to do to make them! This will make about 10 whoopie pies.

    Vanessa – something doesn’t add up. Followed the recipe to a T but they look nothing like the beauties pictured here. They were flat and fell apart way too easy.

      Sorry! Not sure what happened. I made these back in 2018, so it’s been a while since I made them. Everyones ovens are different, so maybe they didn’t bake enough? Maybe bake them a little longer to see if that helps?
