A breakfast burrito is the perfect easy breakfast to make and take on the road with you. You can wrap it up in some sandwich wrap paper or even a paper towel and eat it as you walk. I love to make recipes like this breakfast burrito with these Mission® Protein Tortilla Wraps because they have the added health benefits of incorporating plant-based protein into a balanced diet.

Here is how to make them!

  • 1 Steak of your choice (Can be any cut of Steak)
  • 5 Eggs
  • 1 Tablespoon of Butter or Margarine
  • 4 Tablespoons of Garlic Powder
  • 1 Tablespoon of Oregano
  • 1 Cup of Shredded Cheddar Divided into two Halves (One half is for the eggs and one half is for inside the burritos.)
  • 1 Tablespoon of Oil
  • 1 Large Avocado
  • Salt and Pepper for taste
  • Sandwich Wrap Paper

(Optional Pico De Gallo)

  • 1 Large Tomato
  • 1 Large Onion
  • 3-4 Tablespoons of Lime Juice (Add as much as you’d like)
  • 1 ¼ Cup of Cilantro chopped

To make these breakfast burritos you first season your steak with the garlic powder, salt and pepper, and oregano.

You then cook the steak by adding a tablespoon of oil to your stovetop pan on medium heat and cook up your steak.

While your steak is cooking, use a separate pan on medium heat to cook up your eggs by scrambling the 5 eggs. Place half of the cheddar and some salt and pepper into your scrambled egg mixture.

Once your scrambled eggs are cooked they will be golden and fluffy. Take them off the heat so they don’t dry out.

Heat up your Mission® Protein Tortilla Wraps in your oven on a cookie sheet at 350 degrees for 3 minutes. You then remove the Mission® Protein Tortilla Wraps from the oven and begin to assemble your burritos.

You can assemble these burritos two ways. One way is to make them so they are ready to eat. The other way is to assemble them without the avocado inside so that you can freeze them. Freezing them lets you have a quick breakfast to grab when you’re on the go.

If you’d like to eat them as soon as you make them, lay heated Mission® Protein Tortilla Wraps down on your counter. Add some scrambled eggs, pieces of steak, shredded cheese and slices of avocado to the center of the wrap.

Roll the wrap up on the top and bottom and then roll in the sides to make a burrito shape. That’s all you have to do to make these delicious burritos!

You can also make some not spicy Pico De Gallo to go inside of the burrito. You simply dice up some tomatos, onion, and cilantro. Place the chopped pieces in a large bowl. Add salt and pepper and lime juice for taste. Stir the chopped mixture around and you’re done.

That’s all you have to do to make some Pico De Gallo for your burrito. It’s fine to have this burrito with or without it. I personally feel it tastes even better with it.
