Easy Tampico Tropical Punch Cupcakes!

Summer is in full swing and there is nothing I love more than baking up some fun summer treats with the family, that don’t take a lot of time to make. No one wants to have a hot oven on for hours, so I like to stick to treats that take 20 minutes and under to make. One of our new favorite treats are these Easy Tampico Tropical Punch Cupcakes! They are so easy to make and so much fun to eat!

They look like little glasses of tasty Tampico Tropical Punch and they are so fun to make with the whole family. These cupcakes not only look like a fun glass of tropical punch, they taste like it too!

I came up with these cupcakes especially for this summer because, I’m participating in the Summer Scrapbook Challenge with Tampico. At the end of the summer I’ll create a scrapbook of all our favorite summer memories! This recipe will be going in that scrapbook!

I love the Tropical Punch flavor of Tampico! It infuses into baked treats so perfectly and helps give the treats a great flavor with every bite. Tampico is the positively irresistible juice drink that makes your family’s lives more colorful—with only 30 calories per serving!

We can sip and enjoy it with our tasty cupcakes. I don’t have to worry about my family drinking their calories away with this drink. It’s the perfect beverage to sip on and pair with an after lunch or dinner dessert in the summer.

If you’re looking for the perfect summer drink and the perfect summer cupcake, look no further than Tampico Tropical Punch and these fun Tropical Punch Cupcakes!

Here is how to make the cupcakes.

  • ¾ Cup of Tampico Tropical Punch
  • ½ Cup of Vegetable Oil
  • ¼ Cup of Water
  • 3 Eggs
  • White Store Bought Cake Mix
  • White Whipped Frosting
  • Pink and Pineapple Shaped Sprinkles
  • Limes For Garnish
  • Clear Cups
  • White Cupcake Liners
  • Pink and White Stripe Straws
  • Fruit Drink Stirrers

First you open your Tampico Tropical Punch and pour ¾ cup of drink into a bowl with the cake mix.

Next you add your water, vegetable oil, and eggs to the bowl and mix the batter until it’s completely smooth.

You line a cupcake pan with the white cupcake liners and scoop the cake batter into each liner. Be sure to only fill each cupcake liner half way. You don’t want overflowing cupcake batter as it bakes!

Bake them at 350 degrees for about 15-16 minutes.

Let them cool completely and remove the cupcakes from the paper cupcake liners. Mix pink food coloring and two table spoons of Tampico Tropical Punch with your white whipped frosting. This gives the frosting that Tropical Punch look and flavor.

Stack two cupcakes in a cup and surround the cupcakes with pink sprinkles.

You then fill the cup with your frosting and top the cupcakes with a swirl of frosting to make it look like a drink.

Garnish with a real lime slice…

And a straw and fruity drink stirrer. I cut both of these down to size with my scissors, so that they fit inside the cupcake perfectly.

Add some pink round sprinkles and pineapple sprinkles to the frosting and you’re done! Twenty minutes tops and you have some yummy summer cupcakes!

Who wouldn’t love to serve these to their family and friends this summer? I know I do! You can do a little summer toast with these cupcakes and Tampico Tropical Punch!

If you’re wondering how you eat these yummy cupcakes, you simply eat them like you would a parfait. You scoop the cupcake and frosting out with a spoon or fork.

Your kids will love scooping out the cupcake with their spoons!
