Easy To Make Waffle Fry Chicken Bites & Sweet Potato Fries Dip!

I don’t know about you, but I’m always trying to come up with new quick and easy lunch and dinner ideas. I like to play around in the kitchen and try to make up recipes that have quality all-natural ingredients and a delicious taste. Thankfully I always have Alexia Foods in our freezer at all times. In case you’ve never heard of Alexia Foods, they offer all-natural premium, gourmet frozen potatoes, appetizers, breads & sides perfect for making any meal extraordinary! To be specific, I always have Alexia Sweet Potato Fries with Sea Salt and Alexia Seasoned Waffle Cut Fries in my freezer. I can always come up with something fun to eat with these yummy fries.

They taste amazing as they have a fresh farm to flavor taste, even though they are frozen. A rare thing for frozen foods!

The carefully balanced sweet and savory flavor of Sweet Potatoes together with a hint of Sea Salt, make the Alexia Sweet Potato Fries a favorite, hearty, amped-up alternative to the everyday fry! Alexia offers the delicious Sweet Potato flavor in 6 varieties – straight-cut fries, chipotle-seasoned spicy fries, waffle-cut fries, crinkle-cut fries, rib-cut BBQ fries and bite-size puffs!

Personally, I go for the straight cut Alexia Sweet Potato Fries. When I’m looking for a quick snack for the family, I heat some of these babies up. They are so much better to munch on then your every day fries.

I simply pop them on a baking tray and bake them following the directions on the bags.

I then pair them with a special ketchup dip I make, in which I combine a half cup of home made salsa and a half cup of all-natural or organic ketchup. I call it “Ketchup with a kick”!

To Make the “Ketchup With A Kick” you’ll need:

  • 1 Tomato
  • 1 Green Onion
  • ½ Cup Lime Juice
  • ½ Cup of Yellow Onions
  • ¾ Cup of Jalapeno Peppers
  • 1 Tablespoon of Cilantro
  • 1 Tablespoon Salt
  • 1 Tablespoon Garlic Powder
  • 2 Tablespoons Tomato Paste
  • All Natural or Organic Ketchup

First you dice up all your hard ingredients, like the tomato etc and place them into a bowl. You stir them up in your bowl until they are completely mixed up. You then add the salt, garlic powder, cilantro, and tomato paste to the mixture. You blend all the ingredients together until the seasoning is completely blended into your salsa. You can add more of the seasonings mentioned until you reach your desired flavor.

Once your salsa is made, you place it into the refrigerator for about 20 minutes to get cold. During this time you can bake up your sweet potato fries. It takes about 18-20 minutes to bake the fries. Once it’s nice and cold, those flavors will have blended together for a great easy salsa. I then mix the salsa with about half a cup of ketchup.

I stir it all up to make the perfect little dip for our Alexia Sweet Potato Fries. It’s not too spicy, but it gives our ketchup a little extra kick. My family loves it!

I love this dip and Alexia Sweet Potato Fries as well, but the Alexia Seasoned Waffle Cut Fries are my favorite! These crispy potatoes are lightly seasoned with a flawless blend of sea salt, pepper, onion and garlic to create an all-natural distinctive taste unlike anything you’ll find in your usual fry.

The size and seasoning on these fries make them perfect for some fun recipes. I recently came up with these babies you see below. I call them “Waffle Fry Chicken Bites”. I essentially made little slider chicken sandwiches using the waffle fries as a bun. It basically has the homemade chicken nuggets and all-natural fries in one, with a little added taste of avocado and some Dijon mustard. They are awesome and taste delish! They can be perfect for lunch or dinner and take under 30 minutes to make!

To make these you’ll need:

  • 1-2 All-Natural or Organic Chicken Breasts (Depending on the amount of nuggets you want to make)
  • Coconut Oil
  • A Pinch of Salt and Pepper
  • A Pinch of Garlic Powder
  • All-Natural or Gluten Free Bread Crumbs (we used gluten free ones)
  • 1 Avocado
  • 1 Teaspoon of Dijon Mustard
  • 1 Bag of Alexia Seasoned Waffle Cut Fries

First you preheat your oven to 425 and set up your Alexia Seasoned Waffle Cut Fries on a baking tray and get them ready to bake.

You then cut up your chicken into 1-inch pieces so they fit the length of your fries. You dunk them into coconut oil and season the pieces with a pinch of salt and pepper and garlic powder.

You then dunk each piece into your breadcrumbs.

Make sure each little piece of chicken is covered completely with breadcrumbs.

You then bake both the nuggets and the waffle cut seasoned fries at the same time for about 28 minutes until golden brown.

Once they are out, let them cool slightly so they can be picked up and eaten. You slice up your avocado and build your waffle fry chicken bites.

You pick two fries that are about the same shape and use one for the top and bottom of the bite. You place a nugget, a pinch of Dijon mustard and a slice of avocado on the bottom half of the waffle fries.

You then top with another waffle fry and boom you have one tasty little finger food! It’s perfect for a quick and easy lunch or dinner. It has all the tasty treat ingredients and flavors our family loves for those meal times. I’m sure your kids and family will love them as well!

My family devoured them as soon as I made them. You’ll be surprised by how good they are. They only thing you’ll have to worry about in this delicious dish, are the crumbs that will be left behind.
