Easy Unicorn Vanilla Ice Cream!

Hey All!

I meant to post this yesterday for National Unicorn Day, but yesterday was a hot mess Monday and I didn’t get a chance to do much. I also had to get a sponsored post up yesterday. Of course paying the bills always comes first, but I figured I would share today this yummy goodness that I threw together to enjoy on National Unicorn Day. Check out this Easy Unicorn Vanilla Ice Cream!

I munched on it all day yesterday with this unicorn bread loaf I got at Ralph’s the other day. It tasted amazing together!

Here is how to make it!

  • 2 pints Heavy Whipping Cream
  • 14 oz. Sweetened condensed milk
  • 2 tsp. Vanilla
  • Unicorn colored sprinkles
  • Pink, yellow and blue food coloring

Begin by placing 2 pints of heavy whipping cream into a stand mixer bowl, and beat on high until the heavy whipping cream has gone just past making stiff peaks. This will help your ice cream hold its shape a bit more. Be sure not to whip your heavy cream too long, or you will begin to make butter.

Add 2 teaspoons of vanilla to the heavy whipping cream and pour in 14 ounces of sweetened condensed milk, and fold the mixture together until it is well combined.

Put on third of the ice cream mixture into a bowl, and add a few drops of blue food coloring. Stir the mixture lightly until the color is well incorporated.

Pour the blue colored ice cream mixture into a baking dish, and spread it out evenly. Repeat steps 4 and 5 with the yellow and pink food coloring, layering the new colored ice cream mixture in the baking dish as you go.

Once you have layered all of the different colors, drag a butter knife through the ice cream mixture in the baking dish to lightly swirl the colors together.

Top the ice cream mix with some unicorn colored sprinkles of your choosing. You can also add some edible glitter to make it extra magical!

Place the mixture in the freezer for at least several hours. Leaving it in the freezer overnight is best.

Once it has set, dish out the ice cream as you normally would, Remove it the next day and scoop that unicorn vanilla ice cream goodness!

Make sure to add more sprinkles of course!

You can never have too many sprinkles.

This is what I was munching on with my unicorn bread for national unicorn day!

Who doesn’t love unicorn vanilla ice cream? I know I do!

I hope you love it as much as I do. You can find more fun recipes HERE!
