Yummy Broiled Chicken Kabobs!

Ingredients
  • Ingredients for Marinade:
  • 1 cup vegetable oil
  • ¾ cup soy sauce
  • ½ cup lemon juice
  • 2 tablespoons minced garlic
  • 1 tablespoon red pepper flakes
  • Ingredients for Kabobs:
  • 2 Yellow bell peppers
  • 1 Zucchini
  • 1 dozen Pearl onions
  • 2 Foster Farms Simply Raised Chicken Chicken breasts
  • 8-10 Wooden Skewers
Instructions
  1. In a medium to large mixing bowl, combine vegetable oil, soy sauce, lemon juice, minced garlic, and red pepper flakes.
  2. Mix the contents of the bowl then split contents into 2 separate bowls.
  3. Set your kabob sticks in water while you cut the chicken and vegetables
  4. Remove stems and center from yellow bell peppers. Take remainder and into slices ranging between 1-2 inches. Place the slices into one of the marinade bowls.
  5. Slice the zucchini into quarter inch slices. Drop the slices into the same marinating bowl as the bell peppers.
  6. Peel all of the pearl onions and place them all into the same marinating bowl as the bell peppers and zucchini.
  7. Cut the chicken breasts into 1 inch pieces. Drop the chicken into the unused marinade bowl. For health reasons you must keep the vegetables and chicken in separate marinating bowls.
  8. Set your oven to broil as you prepare the kabobs
  9. Remove the kabob sticks from the water and stack the vegetables and chicken on said sticks.
  10. Place the kabobs on an aluminum foil lined tray then brush marinade over the kabobs. Put in oven for 10 minutes.
  11. After 10 minutes take out tray of kabobs and re-brush with marinade. Return to oven for another 10 minutes.
  12. After the final 10 minutes, your kabobs should be cooked and tender. Let set for just 1-2 minutes then serve.
