Mini Beef Pot Pie

- 1 box frozen puff pastry dough
- 2 tablespoons olive oil
- 1 lb. beef sirloin
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 1 tablespoon tomato paste
- 3 tablespoons of minced garlic
- 1 teaspoon rosemary
- 1 teaspoon parsley
- 1 cup of beef broth
- 8 small red potatoes
- 1 cup pearl onions
- ½ cup cornstarch
- ½ cup water
- 1 bag frozen peas and carrots
- 1 egg
- 4 mini pie pans
- Baking Spray

- Cut your red potatoes and pearl onions into quarter pieces. Make sure the pieces are small enough to fit inside you pie pans.
- Next you cut up your beef sirloin into small cube pieces.
- Place your beef sirloin, onions, potatoes and frozen peas and carrots into a bowl.
- Pour beef broth, olive oil, tomato paste, water, and spices into the bowl and mix all the ingredients together with a larger spoon.
- Coat your mini pie pans with cooking spray and then begin to line the pans with puff pasty dough.
- Spoon in the beef filling into the dough.
- Cut a circular top piece for the top of the pot pie from the puff pastry dough and place it on the top of your beef filling in the mini pie pan.
- Pinch the edges of the dough together in the pan, so the filling doesn't drip out a lot.
- Place your mini pot pies on a cookie baking sheet.
- Whisk 1 egg in a bowl and brush the egg onto the top of the pot pies.
- Place them in the oven to bake for 25-30 minutes.
- Let them cool for at least 5-10 minutes when you remove them from the oven.
- Pair them with some tasty IdahoanĀ® Mashed Potatoes and enjoy!
