Gingerbread Melted Snowman Ice Cream Sandwiches Recipe!

It’s the holiday season and Christmas is quickly approaching. I’m sad to share with you my final collaboration post with International Delight. You all remember my fun sugar cookie hot cocoa and sugar cookies I shared last month.

Well for this month I got some amazing Gingerbread Latte flavored International delight and I got to making some Gingerbread Melted Snowman Cookies that I decided to turn into ice cream sandwiches.

I live in California where it’s 77 degrees in December, So I can happy eat some amazing gingerbread melted snowman ice cream sandwiches

To Make These You’ll Need:

  • 3 cups flour
  • 2 teaspoons Ground Ginger
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon Ground Nutmeg
  • 1/4 teaspoon salt
  • 1 1/2 sticks butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup molasses
  • 1 egg
  • 1 tablespoon of International Delight Gingerbread Latte Creamer
  • Melted Gingerbread cookie cutters
  • White, Black and Red Icing
  • Triangle Shaped Orange Candies
  • Peppermint Ice Cream

1. Mix flour, ginger, cinnamon, baking soda, nutmeg and salt in a mixer. Then pour in the melted butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add molasses, egg and gingerbread latte International Delight creamer into the mix. Gradually beat on low speed until it becomes a dough. Press dough into a ball and wrap in plastic wrap. Refrigerate for 2 hours or place inside the freezer for 20 minutes to cool faster.

2. Preheat oven to 350°F. Roll out dough to 1/4-inch thickness on lightly floured work surface. Cut into gingerbread with the Melted Gingerbread cookie cutters. Place 1 inch apart on ungreased baking sheets and bake 8 to 10 minutes or until edges of cookies are set and just begin to brown. Cool on baking sheets 1 to 2 minutes. Remove to wire racks; cool completely. Decorate cooled cookies with black and red icing and orange triangle candies to make the melted snowmen. Store in freezer for 10 minutes for icing to harden quickly.

3. Take non-decorated cookies and make them the bottoms for cookies. Place one large scoop of Peppermint Ice Cream onto the cookie.

4. Top with Gingerbread Melted Snowman Cookie and press two cookies together.

Serve and enjoy your delish Gingerbread Melted Snowman Ice Cream Sandwiches.
