Hey All!
Happy National Ice Cream Month! Usually we celebrate ALL MONTH LONG as this is our month and I’m the self proclaimed ice cream queen, but unfortunately with the baby and everything we had to do in the past few months, I unfortunately could not get enough content done for you in time to celebrate my favorite month. I’m not going to lie and say I’m just as disappointed as you are. It’s something we’ve done for years and it feels so off to skip a year. I promise we will be back to our regularly scheduled program next year with a big ice cream themed giveaway. I did manage to get at least a few ice cream themed fun posts done and here is one of them! Check out these super cute Ice Cream Month Celebration Cupcakes!
They are so cute and super easy to make. They are perfect for celebrating National Ice Cream month!
This is how to make them!
- 6 Prepared Cupcakes, unfrosted
- 1 Can Chocolate Frosting
- 1 Can White Frosting
- 1 pkg. Vanilla Wafer Cookies
- 1 pkg. Cherries Gummy Candy (Haribo)
- Pink Food Coloring
- Star Tip for Piping
- Piping Bag or Plastic Baggie
- Optional: Non Pareil Sprinkles
First using a sharp knife, cut 3 vanilla wafer cookies in half and cut each half into a cone shape. Frost each cupcake with a thin, smooth layer of white frosting.
Next you set a wafer cone on top of each cupcake with the wide end of the cone laying on the middle and the point end hanging over the edge of the cupcake. In a small bowl, mix some white frosting with a few drops of the pink coloring. Put this pink frosting into the piping bag.
Pipe a circle of pink frosting right above the cone so it looks like a scoop of ice cream. At the bottom of the pink circle, right where the cone line meets the pink frosting, pipe about 5 rosette dots in a row. You want it to look like the little rim on the scoop of ice cream when you scoop it out. Place a cherry gummy at the top of the round circle scoop.
Lastly drop some sprinkles on each scoop of ice cream. Repeat these steps using the chocolate frosting on the other cupcakes.
