Looking for a way to use up some of that Halloween candy? Check out these Leftover Halloween Candy Cupcakes!
Hey All!
Since we’re not trick-or-treating this year and we probably won’t have any knocking at our door this year, I was left with a bunch of Halloween candy. I’m not complaining but, we needed to figure out some way to use it as opposed to just eating it all up. I decided to make some Leftover Halloween Candy Cupcakes! These are so fun and you can put any Halloween candy you may have on top of them.
Don’t worry. We’re not eating all the candy ourselves! We’re putting a bowl outside our door for people to take it if they want. We can’t eat it all folks, but we can eat a good amount and eat it on some cupcakes!
If you’re team Halloween candy cupcakes, here is how to make them:
For Cupcakes:
4 packages of Wilton 3 oz Halloween Sprinkle mix
1 box chocolate cake mix.
Ingredients as listed on the back of the cake mix box.
Muffin pan.
cupcake liners.
Vanilla Frosting Ingredients:
1 1/2 Cup unsalted sweet cream butter, softened.
3 Cups powdered sugar.
5-7 tbsp. heavy whipping cream.
2 tsp. vanilla extract.
Black gel food coloring.
1 disposable piping bag with medium star tip.
1 medium ice cream scooper.
3 Cup of the halloween sprinkles.
Chocolate Ganache topping:
1 Cup Semi Sweet Chocolate chips
½ Cup Heavy Whipping Cream
16 mini twix candy bar cut into 3 pieces
1 disposable piping bag
First you make your cupcakes! Preheat oven as per directions on the box, Put the liners in the muffin pan. Set aside.
Following the directions add ingredients. Mix all ingredients as instructed. Fill cupcake liners 2/3 full. Put in the oven and bake for 22 minutes. Insert a toothpick into the center of a cupcake to see if it’s done. It should come out clean. If they are not done, check again every three minutes until they are done.
Remove from the oven and allow to cool. Transfer to a cooling rack and allow to cool completely before frosting.
Next make the frosting. Using a standing mixer combine the butter, powdered sugar, heavy whipping cream, vanilla, black food coloring and mix on medium speed until combined and smooth.
Using the black frosting, scoop a small amount into the ice cream scooper and place onto the top of the cupcake and spread slightly into a thick disk. Pour the Halloween sprinkles into a deep bowl and dip the top of the cupcake frosting into the sprinkles. Set aside.
Next make your chocolate ganache. Using a medium pot, bring the heavy whipping cream to a simmer. Pour the chocolate chips into a medium bowl, pour the heavy cream over the chocolate chips.
Let sit for 2 minutes and then mix until smooth and combined. Scoop the ganache into the piping bag. Cut the tip off the piping bag and pipe a thick circle in the center of the frosting.
Place twix onto the ganache. Pipe some more ganache onto the top of the twix candy. Place some more twix on top and Enjoy!
