Lisa Frank Inspired Rainbow Jack-O-Lantern Cake!

Hey All!

It’s become a tradition for me to come up with a fun Lisa Frank inspired Halloween Cake to make each year. This year I was inspired by my Lisa Frank Halloween pumpkins and a Lisa Frank rainbow pumpkin pencil to make this amazing Lisa Frank Inspired Rainbow Jack-O-Lantern Cake! I immediately contacted my friend Rose at Sweet Events By Anna Rose to make my cake dreams come true. This is the amazing Lisa Frank Inspired Halloween Cake she made for me last year! I knew she could pull off this amazing rainbow pumpkin cake. I sent her a pumpkin cake pan and the amazing folks at Pillsbury were kind enough to send us all the amazing Funfetti products used for this cake! Check out how we brought this amazing cake to life! I’m obsessed with it!

Hi Friends!!!! When Vanessa asked me to help her do a Lisa Frank inspired Jack-O-Lantern cake, I was ecstatic! Any Lisa Frank inspired treat is so much fun to make! And with the Pillsbury Funfetti cake mixes and icing it was super easy and much more fun.

For this cake you will need:

Pillsbury Funfetti cake mix bags in different colors
• Pillsbury Funfetti icing in rainbow colors (sprinkles come with the icing)
• 1/3 cup of oil per bag of cake mix
• 1/3 cup of water per bag of cake mix
• 2 egg whites per bag of cake mix
• An envelope of instant pudding or pie filling per cake mix
• black fondant for eyes, nose and mouth
• a Stand-up Pumpkin Cake Pan
• a small and medium frosting spatula

Preheat the oven to 325 degrees. I adjusted the cake recipe a little bit in order to make a denser cake so it could stand up. For this pan, you will need about 5 cups of cake batter. Because I was using different colors I made all 6 bags of cake mix, so I had a ton of cake batter left over for another cake. Pour a bag of cake mix, instant pudding, water, oil, egg whites in a bowl and mix well. Repeat for each cake mix color. The batter will be somewhat thick. Grease thoroughly both sides of the pan with shortening using a brush or small piece of paper towel. Inside the front half of the pan, spoon different colors of cake batter carefully so the colors don’t mix. You will fill up one half of the pan all the way to the rim.

Cover with the other half. Using baker’s string, tie the pan as tight as you can. Bake on the oven middle rack for 1 hour and 10 minutes. When cake is done, remove from oven and place in cooling rack for 5 minutes. Remove top half and cool for 5 more minutes. Replace top half and carefully turn pan over and remove the other pan half. Let cake rest in front half of the pan (the face half) for at least 8 hours to cool completely.

To decorate the cake:

Stand cake on a small cake plate. Cake should be sturdy. If it doesn’t stand, cut part of the bottom or use frosting to prop it up. Apply stripes of frosting on a diagonal angle using rainbow colors. Start with a good amount of frosting with a medium spatula and fill in holes with the small spatula. I used a stripe of flexible plastic to smooth out the frosting. It lets you smooth out a curved cake.

This will take a little while. Be patient. Repeat the pattern on the other side. Cover the knob in green. Place mouth, nose and eyes on the face. Carefully move to your final plate and spread sprinkles all around it.

And Voila! You are done!

Cutting the cake was a little messy, but that’s ok! My kids devoured it, so that was proof that it was delicious and the mess was worth it!
