I’m always on the hunt for the chewiest chocolate chip cookie recipe and I think I’ve hit the jackpot with these Mini Chewy Chocolate Chip & Pecan Cookies! They are so tasty and I’m thrilled to share them with you today. You all know I love to make the mini versions of all my favorite treats and chocolate chip cookies seemed like the perfect treat to make bite sized. I made these tasty little chewy cookies with Karo® Corn Syrup. Adding this to my cookies made them so much more chewier and tastier. In case you’ve never used Karo® Corn Syrup, it is the leading corn syrup brand with over 100 years of quality and trust over multiple generations. You may use Karo® Corn Syrup for baking during the holiday season, with the main usage occasion being Thanksgiving Pecan Pie. You can use it for so much more than just Pecan Pie! Using Karo® Corn Syrup in chocolate chip cookies results in some chewier, great-tasting cookies!

If you’re from down South, you know what I’m talking about! Karo® Corn Syrup is often a staple of Southern cuisine, where it is used often in baked goods and a sweet topping for pancakes. Yep people pour this on pancakes like syrup down South! It makes such a variety of recipes all the more tasty. That’s why Karo® Corn Syrup​ is the perfect ingredient to make cookies really chewy on the outside and still soft in the middle.

Those are the best kinds of cookies in my opinion! I like my cookies chewy on the inside and nice and golden brown on the outside. This is now a staple in my chocolate chip cookie recipes and for a lot of my holiday baking recipes.

It’s great for everything from the irresistible classic Pecan Pie to the perfect chewy Chocolate Chip Cookies, recipes are simply better when made with Karo® Corn Syrup. So, whatever it is you’re baking or making, be sure you are using Karo® Corn Syrup for all of life’s sweetness. You will definitely thank me when you bake these up and tasty how yummy they are for yourself! Here is how to make them!

(I adapted this Chocolate Chip Cookie recipe from the Karo® Corn Syrup website and turned it into some mini pecan chocolate chip cookies!)

  • 3/4 cup butter OR margarine, softened
  • 3/4 cup brown sugar
  • 1/2 cup Karo® Corn Syrup (light)
  • 1 egg
  • 2 teaspoons pure vanilla extract
  • 2-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 package (12 ounces) semi-sweet chocolate chips
  • 1 cup of pecan pieces

First you open up your bottle of Karo® Corn Syrup (light) and preheat your oven to 350°F.

Using an electric stand mixer (or a hand mixer), beat butter and sugar in large bowl until fluffy. You then beat in Karo® Corn Syrup (light), egg and vanilla. Lastly, you gradually beat in flour, baking soda and salt until combined.

It will form the base of your cookie dough. You then stir in pecans and the whole bag of chocolate chips.

Form small 1 inch wide balls of cookie dough in your hands by rolling the dough in your hands. Drop the small dough ball onto a parchment paper lined baking sheet.

You then bake for 9 to 11 minutes or until lightly browned.

You then let them cool for 1 to 2 minutes right in the pan and then remove them from the pan to wire rack to cool completely.

I honestly like to eat my cookies when they are still warm. They taste amazing warm and they are soooooo chewy! Honestly, using Karo® Corn Syrup in chocolate chip cookies results in chewiest cookies and adding this to any recipe will be sure to enhance your traditional cookie recipes.

I’ve honestly been using Karo® Corn Syrup for a while in other recipes and I’m so glad I started using it in my chocolate chip cookie recipes. It’s made them amazing!

That’s all you have to do to make these awesome little bite sized cookies! Karo® Corn Syrup really makes cookies chewier on the outside and soft in the middle.

Every bite is filled with some chocolate and pecan yummy goodness! I love that I can reach for one of these cookies and get the same big taste a regular sized cookie.

These cookies have the same big taste in a mini size! I love to serve them to my family and friends when they come over. They are the perfect mini sweet treat to enjoy with friends and family.
