I don’t know about you, but while my friends and family are enjoying their big game day football on tv, I like to sit back and enjoy all the yummy tailgating recipes I make for everyone to eat. I’m all about the food and commercials. With a big game coming up soon, I decided to make some Mini Lasagna Taco Boats with the help of Old El Paso and my local Pavilions for the occasion. You too can spice up your game day with Old El Paso recipes and ingredients from Pavilions.
Old El Paso has a bunch of great recipes on their site that are perfect for game days, but I chose to try out a new recipe I’ve been wanting to make with their new Mini Old El Paso™ Taco Boats™. I’m obsessed with them because they are mini size! It’s so perfect to use to make tailgating finger foods with. I love shopping at Pavilions because it’s always to easy to find everything I need. I quickly got everything I needed to make my Mini Lasagna Taco Boats. I love when my grocery store has everything I need in stock. Pavilions never lets me down!
To make these Mini Lasagna Taco Boats, here is what you’ll need.
- 12 Old El Paso™ Mini Soft Flour Tortillas Taco Boats™
- 3/4 cup garlic and herb pasta sauce
- 3/4 cup ricotta cheese
- 3/4 cup shredded mozzarella cheese
- 1/2 cup shredded Italian blend shredded cheese
- 5 slices of Oven Ready Lasagna noodles ( broken into smaller pieces to fit into the boats)
- Cookie Sheet
- Parchment Paper
First you heat your oven to 375°F, so the oven can heat up while you assemble your mini lasagna. A the bottom of each boat you put some of the Italian blend shredded cheese.
You top the Italian blend shredded cheese with some pieces of the Oven Ready Lasagna noodles.
You top the Oven Ready Lasagna noodles with some ricotta cheese.
You top the ricotta cheese with a layer of garlic and herb pasta sauce.
You top it once again with some pieces of the oven ready lasagna noodles, some ricotta cheese, and lastly the mozzarella cheese. I put a lot of mozzarella cheese, since I love cheese.
On a cookie sheet lined with parchment paper, you place your lasagna boats to cook. Bake them for 18-20 minutes or until the cheese is melted and the edges are golden.
Once they are done, remove them from the cookie sheet and place them on a serving tray to cool for 4-5 minutes. You want to make sure they aren’t so hot that when you bite into them, you don’t burn your mouth. Once they are cooled, serve and enjoy.
You can serve them on a tray or on some football napkins.
They are easy enough to pick up and eat like a regular finger food.
They taste amazing and you’ll love every bite as you watch your big game.
