I don’t know about you, but when I’m making dinner each night I like to make my meals to be quick, easy, and most importantly tasty! More often than not, I want to spend no more than 30 minutes to an hour making dinner. Who wants to spend hours slaving over a hot stove? I know I don’t! Thankfully, I can always do that because I love to make amazing dishes like IdahoanĀ® Mashed Potatoes for dinner. I pair them with everything from roasted chicken to this mini pot pie I made for dinner this week. They are my FAVORITE mashed potatoes to make for dinner! We have meat loaf Mondays with them and sometimes we have them again on another day of the week like Sundays. This past weekend I made them with a mini beef pot pie and it was the perfect pairing for our dinner.

The pot pie took quadruple the amount of time it took to make these mashed potatoes. You simply boil some water, remove the water from the heat after it’s boiling, empty the package into the water and stir. I love that one little package is enough as a side for our whole family. I usually place some on a dish and then place any left over in a bowl in case anyone wants more when I serve these delicious mashed potatoes. Ingredients
  • 1 box frozen puff pastry dough
  • 2 tablespoons olive oil
  • 1 lb. beef sirloin
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon tomato paste
  • 3 tablespoons of minced garlic
  • 1 teaspoon rosemary
  • 1 teaspoon parsley
  • 1 cup of beef broth
  • 8 small red potatoes
  • 1 cup pearl onions
  • ½ cup cornstarch
  • ½ cup water
  • 1 bag frozen peas and carrots
  • 1 egg
  • 4 mini pie pans
  • Baking Spray

Instructions
  1. Cut your red potatoes and pearl onions into quarter pieces. Make sure the pieces are small enough to fit inside you pie pans.
  2. Next you cut up your beef sirloin into small cube pieces.
  3. Place your beef sirloin, onions, potatoes and frozen peas and carrots into a bowl.
  4. Pour beef broth, olive oil, tomato paste, water, and spices into the bowl and mix all the ingredients together with a larger spoon.
  5. Coat your mini pie pans with cooking spray and then begin to line the pans with puff pasty dough.
  6. Spoon in the beef filling into the dough.
  7. Cut a circular top piece for the top of the pot pie from the puff pastry dough and place it on the top of your beef filling in the mini pie pan.
  8. Pinch the edges of the dough together in the pan, so the filling doesn't drip out a lot.
  9. Place your mini pot pies on a cookie baking sheet.
  10. Whisk 1 egg in a bowl and brush the egg onto the top of the pot pies.
  11. Place them in the oven to bake for 25-30 minutes.
  12. Let them cool for at least 5-10 minutes when you remove them from the oven.
  13. Pair them with some tasty IdahoanĀ® Mashed Potatoes and enjoy!
