Hello my Brite and Bubbly readers! I’m Rose from Sweet Events by Anna Rose, and I’m super ecstatic to share my rainbow whoopie pie recipe with you today!  Growing up I ate a lot of whoopie pies, especially the classic chocolate and cream-filled ones.  I feel like a kid again every time I make them, although I feel the same with all my dessert creations, really! This is my go-to dessert whenever I need to add a pop of color to a dessert table, and I’m short on time.  They are so easy to make and so much fun to eat.  Typically, I fill them with buttercream, but since July is National Ice Cream Month (yay!), ice cream is a must!To make these Rainbow Whoopie Pies Ice Cream Sandwiches you will need:

Rainbow Whoopie Pies Ice Cream Sandwiches Ingredients

Supplies-DIY-Recipes

  • 2 1/3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 6 tbsp butter – room temperature
  • 1 cup sugar
  • 3 large egg whites
  • 1 1/2 tsp vanilla extract
  • 1/2 cup milk
  • desired rainbow food coloring  3-4 colors at most
  • desired ice cream flavors
  • rainbow sprinkles
  • cotton candy any color

How-To-DIY-Recipes

Preheat oven to 350F. Line a baking sheet with parchment paper. In a medium bowl, whisk together flour, baking powder, baking soda and salt. In a large bowl, cream together butter and sugar until light. Beat in egg whites, one at a time, followed by vanilla extract. Beat until batter is smooth and thick, about 2 minutes. Stir half of the flour mixture into the butter mixture, followed by the milk. Stir in the remaining half of the flour mixture, mixing just until all the ingredients come together. Divide batter by the number of colors you will be using into separate bowls. You shouldn’t have more than 4 colors.

Add one color to each portion of the batter. Be generous with your food coloring to get bright colors. Transfer each portion of batter into a piping bag, or a ziploc bag with the corner snipped off.  Insert any two piping bags inside an empty third piping bag. On prepared baking sheet, pipe batter into circles about 1 inch in diameter.  You will have two colors on each one of the circles.  Use about half the batter.  Pipe another circle right on top of about 1/4 inch of a third color.  Give it a quick swirl with a toothpick without mixing the colors too much.

Switch one of the piping bags for a different color and repeat until you have used all the batter.  The idea is to have different color combinations to create your rainbow effect.
Bake for 10-12 minutes, until cakes are set and spring back when lightly pressed.

Allow to cool completely before filling. This makes about 18 whoopie pies (36 individual cakes). (Whoopie pie recipe adapted from Baking Bites.com)

To fill the Whoopie Pies, Pair up your cookies so that tops and bottoms are different colors.

Add a scoop of ice cream, sprinkles and a piece of cotton candy right on top.
