I’m back!!!! All week long I’ll be sharing fun Valentine’s Day and Galentine’s Day Recipes and DIY’s that you can easily do last minute. Lots of printables coming your way this week. Get ready! Woot! Hope you like it! We’re kicking it off with these cute Valentine’s Day Mickey Jammie Dodger Cookies. Who doesn’t love getting a sweet baked tasty treat for Valentine’s Day? I know I do!

I especially love them because they are Mickey shaped too. Mickey shaped food makes everything better. Am I right? I totally am…

Just kidding around folks. Here is how to make them:

1 Cup unsalted sweet cream butter, softened
1⁄2 Cup sugar
1 tsp pure almond extract
2 1⁄2 Cup flour
1⁄4 tsp kosher salt
3⁄4 Cup raspberry preserves
1 Cup powdered sugar for dusting
1 – 3 inch mickey mouse cookie cutter
1 – 1 inch mini heart cookie cutter

Preheat the oven to 350 and line two cookie sheets with parchment paper. Using a standing mixer, or a large bowl with hand mixer, beat the butter, sugar, and almond extract until creamy and fluffy. Gradually mix in the dry ingredients until combined and dough like. Remove cookie dough and place onto a lightly flour dusted cutting board.
Place dough onto cutting board and dust with more flour and roll the dough to about 1/4 inch thick.

Cut out 12 mickey heads and place them onto the cookie sheet. Using the mini heart, cut out 6 hearts in the center of the mickey head.
Bake in the oven for about 8-10 minutes or until a light golden brown.

Remove from oven and allow to cool completely before moving off tray.
Place the cookies with the heart in the middle onto a wire rack and dust with powdered sugar.

Spread about 1 tbsp of raspberry preserves onto the whole mickey head cookie.

Carefully place the freshly dusted mickey head onto the top of the raspberry jam.

Place them inside a little heart box or in a Valentine’s Day themed tin and give them as a gift for Valentine’s Day or Galentine’s Day! They would work for either day.

Who wouldn’t love the gift of some tasty cookies? I know I would.
