Yummy & Easy Thin Mints Popcorn!

Did you know Girl Scouts sell cookies all year long? You can get them online at their Digital Cookie™ platform and find your local troop that sells online or is still selling! If you’re lucky to have a mom who worked at Girl Scouts for decades like I do, then you know you have the Girl Scout cookie connection all year long. That’s right folks! I can score girl scout cookies when ever I want, so Girl Scout Cookie Season was essentially all year for me. I grew up with them and always have some on hand that my mom sends me. I don’t think I’ve ever mentioned that before here on the blog. I think it’s because I like to hoard my Girl Scout Cookies and hated everyone begging me to get them some growing up! So don’t even ask! I’m not sharing my cookie stash! lol. What I will share is this Yummy Thin Mints Popcorn recipe, which will give you a new and fun way to eat up those yummy cookies!

Here is what you’ll need to make it!

First you line a large cookie sheet with wax or parchment paper.

In a single layer, lay the popcorn out on the cookie sheet. In a microwave safe bowl, microwave the dark cocoa melts for 45 seconds. Remove from microwave and stir. Microwave in additional 10 second increments until completely melted and smooth.

You then drizzle the melted dark cocoa chocolate all over the popcorn.

Sprinkle the Thin Mint cookie pieces on top of the melted chocolate.

Before the chocolate hardens, sprinkle with the light green jimmies.

Chill for 20 minutes, to allow the chocolate to completely harden.

Break up the popcorn into pieces and ENJOY!!

Now all you need to do is throw on the movie Troop Beverly Hills and munch on your tasty Thin Mints Popcorn!

You can store this sweet popcorn in an airtight container for up to 2 weeks and enjoy it when ever you want!
