Yummy Irish Soda Bread!

Hey All!

With Saint Patrick’s Day around the corner, I figured I would give you one last Irish themed recipe to enjoy on this fun holiday. Check out this Yummy Irish Soda Bread! It’s super tasty and not too hard to make. I am a bread-a-holic, so I’m all about making delicious bread. I especially love warm bread. Nothing is better than warm bread! Am I right?

Here is how to make it!

4 1/2 cups all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking soda
1/2 teaspoon sea salt
5 tablespoons unsalted sweet cream butter
1 cup baking raisins
1 large egg, at room temperature
1 3/4 cups warm buttermilk
1 tablespoon extra virgin olive oil for brushing the cast iron skillet
1/4 cup of all-purpose flour for dusting hands and work area

Preheat oven to 425 degrees. Brush a single tablespoon of extra-virgin olive oil into a 12″ cast iron skillet. Place the skillet into the oven.

In a large bowl combine the dry ingredients first, flour, sugar, and baking soda, and mix well with a fork. Add five tablespoons of melted butter and raisins, continue to mix until the ingredients are fully incorporated.

Crack a single room temperature egg into large measuring cup and beat thoroughly, pour in 1 3/4 to 2 cups of buttermilk and mix. Pour the egg and buttermilk mixture a little at a time into the flour, continue to mix until the bread just holds together.

Scatter a 1/4 cup of flour onto a clean work surface, remove the bread dough from the bowl and knead gently, working the dough into a ball. Using a large kitchen knife score a two (2) inch deep X into the top of the bread dough.

Put on an oven mitt and remove the hot skillet from the oven, place the bread dough in the skillet and place the pan on the center rack. Bake for 45 minutes.

If the top of the bread is browning too quickly tent with foil.

To check for doneness insert a toothpick into the bread if it comes out clean the bread is done.

Remove from the oven and allow to bread to cool.Serve with sweet cream butter or jam.

That’s it! Hope you enjoy this delicious bread as much as I do!
