During the summer I love to host brunches for my friends. It’s the perfect time of year to host brunches at my house and I am the hostess with the mostess. It’s a great opportunity to catch up with friends as most are free because their kids are away at camp or are visiting the grandparents etc. Who doesn’t love to eat some delicious french toast or waffles while you sip on some mimosas with your gal pals? I know I do! We love to laugh and gossip as we chow down over brunch. This summer, I decided to sweeten up our brunch beverages. I wanted to mix things up and make some Pineapple Mimosas instead of our usual Orange Mimosas. What’s great about these drinks is that these are sweetened with Sweet ‘N low is a zero calorie sweetener. This helps to reduce the calories in the drinks. That’s always a bonus as we’re all on diets for the summer!
It’s the perfect drink as you can enjoy the sweetness you love in a drink without the extra calories. Sweet ‘N Low is also diabetic friendly, in case you have any friends who have to monitor their foods and drinks because of that.
To Make This Fabulous Pineapple Mimosa You’ll Need:
- 1 Whole Pineapple
- 2-3 Packets of Sweet ‘N Low
- 2 Cups of Passion Fruit Juice
- 2 Cups of Pink Champagne
- 2 Cups of Soda Water
- Cherries for Garnish
- Blender
- Champagne Flutes
This will make one pitcher of Pineapple Mimosa. First you slice and dice up your pineapple. You leave one to two slices of pineapple for garnish depending on the amount of people you’re serving. You place the diced pineapple in the freezer and let it become frozen.
You then take the frozen pineapple out of the freezer and pour it into the blender with all your liquid ingredients including the Pink Champagne, Passion Fruit Juice, and Soda Water.
You then pour in your Sweet ‘N Low packets in one at a time. Blend all the ingredients together until all the pineapple is completely blended and turned into liquid. If you like the taste of some of the pineapple pulp in your drinks, you don’t have to blend it so well. You can blend and taste as you go. You can add more Sweet ‘N Low packets if you want it to be sweeter. I only usually use 3 packets max.
Once it’s completely blended you pour into a pitcher and then pour into your champagne flutes.
You garnish each glass with a slice of pineapple and a cherry for some fun color.
It kind of looks like a Piña Colada, but it has more of a mimosa taste and feel. Who doesn’t love having a cherry in their drink?! I know I do!
You can sip on these and enjoy eating the fabulous garnish as well. They are the perfect summer brunch drink in my opinion. I firmly believe pineapple drinks are the best. I especially love when I don’t have to worry about having too many calories in my drinks as well. Thanks to Sweet ‘N Low for that!

OMG what a great idea to add Sweet & Low – I am usually a natural sugar guy when it comes to drinks but this is a great alternative and it sounds delicious too!
