Yummy Pozole Rojo Pollo aka Chicken Recipe!

Happy almost Three Kings Day! For some Puerto Ricans like myself, this holiday is just as important as Christmas to us. In fact, the Three Kings, or Los Reyes Magos, is something me and my family love coming together to celebrate. The holiday season officially ends for us after the 6th and the holidays are all about family, so we try to spend as much time together as we can. And of course we spend a lot of that time in the kitchen during the holidays and around our table enjoying our favorite meals.

One quick and delicious meal I like to put together for the holidays is Pozole Rojo. I can customize it with chicken and some Knorr Bouillon, which gives it an authentic and tasty flavor that my family loves for the Three Kings Day. This recipe was adapted from THIS RECIPE from the Knorr website.

You can find the original recipe, which uses pork on the Knorr website.

  • 1 lbs of Chicken Breast cut into 1 inch cubes
  • 2 Tbsp. vegetable oil
  • 1 white onion, chopped
  • 2 cloves garlic, finely chopped
  • 1/2 tsp. ground cumin
  • 1/2 tsp. dried oregano leaves, crushed
  • 1 can (14.5 oz.) diced tomatoes
  • 1 can (15 oz.) hominy, drained and rinsed
  • 1/2 cup water
  • 2 cubes Knorr® Tomato Bouillon with Chicken flavor Cube(s)

Season you cubed chicken breast with salt and pepper. Heat 1 tablespoon oil in a large, deep skillet over medium-high heat and brown your chicken. Remove the chicken from the heat of the stove top when it’s half way cooked and set it aside.

Reduce heat to medium and heat remaining 1 tablespoon oil and cook onion about 4 minutes or until soft, stirring occasionally. Add garlic, cumin and oregano, and cook about 1 minute.

Add the chicken back and remaining ingredients. Bring everything to a boil. Reduce the heat and let it all simmer in the skillet covered with a lid for about 45 minutes.

Once it’s all tender and cooked, serve in a fun large bowl in which everyone can serve themselves with.

The flavor of the Knorr really makes this recipe pop with every bite.

I love eating it with warm torillas, almost like some chicken fajitas.

You just warm the tortillas up on the stove top and serve with the Pozole Rojo.
