Hey All!
Since I’m all about the Pumpkin Spice this Thanksgiving, I wanted to share another easy to make pumpkin spice flavored dessert with you today. These would be perfect to serve as a tasty dessert after all those Thanksgiving feasts. Check out these Yummy Pumpkin Spice Cookie Bars! It’s like a cookie and cake in one! I love me a festive cookie bar! They are topped with fall themed sprinkles and are the perfect amount of pumpkin spice and everything nice! Pun intended!
Here is how to make them!
- 1 9×13 parchment paper lined baking dish
- 1 C unsalted sweet cream butter, softened
- 1 1/4 C sugar
- 2 large eggs, room temperature
- 2 tsp pure vanilla extract
- 1 C canned pumpkin puree
- 3 1/4 C flour
- 2 tsp pumpkin pie spice
- 1 1/2 tsp baking powder
- 1/4 tsp salt
Cream cheese frosting ingredients:
- 1 8 oz package of cream cheese, softened
- 1/2 C unsalted sweet cream butter, softened
- 2 tsp vanilla
- 2 1/2 C powder sugar
- 1/2 tsp cinnamon
- Wilton harvest/fall themed sprinkles
First you preheat your oven to 350 degrees and line your baking dish with parchment paper. Using a standing mixer, cream together the butter and sugar. You then add in the eggs, pumpkin pure, and vanilla extract and mix until combined.
Then in a large bowl, combine the flour, pumpkin pie spice, baking powder and salt. Using a whisk, mix all until combined completely and gradually add in the flour mixture into wet mixture until combined. Next you scoop the batter onto a parchment paper lined baking dish.
Spray non-stock cooking spray on your hand so that you can flatten down the batter into the pan with getting the batter on your hands. Place it into the oven and bake for 20 minutes. Once baked, place onto a wire rack to cool to room temperature. Using the standing mixer, combine the butter, vanilla and cream cheese and mix until combined. Add in the cinnamon and powder sugar and mix until combined and fluffy. You then scoop the frosting onto the cooled cookie and smooth it out.
Lastly you Sprinkle the fall themed sprinkles onto the frosting and place into the fridge for an hour for the frosting to harden. Cut them into bars and that’s it, you’re done!
