It’s always good to end a crazy week with a tasty treat. I figured what could be tastier than a fruity pebbles rainbow cereal cookie? Nothing right! These cookies are beyond tasty and easy to make. You can have cookies for breakfast right? I say so. I’m saving these and enjoying them all weekend long.
Here is how to make them!
- 1 1/3 Cup Fruity Pebbles Cereal
- 1-3.4 oz package Instant Vanilla Pudding
- 1 ½ Sticks Butter (Softened)
- 1 Cup Sugar
- 2 Eggs
- 1 Tsp Vanilla
- 2 Cups Flour
- 1 Tsp Baking Soda
First you pre-heat oven to 350 degrees.
In a large mixing bowl, add the sugar and butter. Beat on medium speed until combined. Add the package of pudding and mix well. Then add the eggs and vanilla and mix for additional 1-2 minutes or until combined.
In a separate bowl, whisk together the flour and baking soda. Add the mixture to the wet ingredients and beat on low speed until combined.
You then stir in the Fruity Pebble cereal.
Scoop 1-inch balls and place on a parchment lined cookie sheet. With a glass cup, flatten down the cookie just a little.
Place in oven and bake for 7-8 minutes. Wait until they are slightly golden brown at the edges and bottom. This recipe makes about 32-34 cookies.
