As you all know I’m trying to be healthier this year and to do that, I’m trying to eat healthier by adding more organic foods into my diet. I have a major sweet tooth, which is my biggest issue as I try to eat healthier. To satisfy this sweet tooth, I’ve been trying to come up with healthy alternative sweet treat recipes like theseĀ No-Bake Almond Coconut Cookies! I made them with vanilla So Delicious Dairy Free Organic Almondmilk!Ā This is a clean and simple almondmilk, with only 5-8 ingredients, and has a plant-based bottle too! There is nothing like it in the specialty milk category. It works perfectly in recipes and I also love to have it in my smoothie drinks and with my cereal. I picked it up at my home away from home Target!
Target always has everything I need to make my recipes with! The way the store is laid out, it makes everything so easy to find. I love their grocery section with a passion and I literally shop at Target multiple times a week.

Here is how to make them!
1 cup So Delicious Dairy Free Organic Almondmilk in Vanilla
1/2 cup organic almond butter
1/4 cup pure maple syrup
2 tsp pure vanilla extract
A Pinch of salt
3 cups old-fashioned oats
2 cups of dried organic coconut chips
1 cup of organic sliced almonds
Cookie Sheet
Wax Paper
First you combine the So Delicious Dairy Free Organic Almondmilk in Vanilla, almond butter, maple syrup, vanilla extract and salt into a pot over medium heat. Mix the ingredients together with a spoon and bring the mixture to a boil. Make sure you stir it frequently, so none of the ingredients stick to the pot.
Cook for about 10 minutes, which will make the mixture thick and froth upwards in the pot. You then stir in the old-fashioned oats, dried coconut chips, and sliced almonds. Make sure to blend them in completely, so all the dry ingredients are distributed equally in your pot. You also want all the ingredients to be combined completely. You’ll turn off the heat and let it cool for about 30 seconds.
Use an ice cream scoop or spoon to scoop out a dollop of cookie onto a baking sheet lined with waxed paper. Make sure to try to make each dollop as round as possible.
You then the cookies air dry and harden for about 2-3 hours and that’s it! You’re done! Store them in an airtight container and enjoy!
These would go perfectly even with a glass of So Delicious Dairy Free Organic Almondmilk or if you’re hosting a tea party or brunch.
They are also perfect to munch on when you’re craving a cookie or after a work out.
