DIY Stranger Things Surprise Cupcakes!

Hey All!

You all got a look at my Stranger Things Party yesterday, so today I wanted to share how we made the amazing cupcakes I served at the party. They were of course Stranger Things themed and filled with spooky sprinkles. They each had an edible topper ranging from the logo of the show to a mini edible cup of coffee, for all those who want a little bit of “Coffee and Contemplation”! There are edible Eggo chocolate waffles as well.

My husband loves the little coffee mug and I love the logo! They are all super cute and perfectly themed for a Stranger Things Party!

Here is how to make them.

First you mix up your cake batter following the instructions on the box and using a mixer.

You then add a few drops of red food coloring to the batter.

Use an ice cream scoop to scoop some of the red cupcake batter into your red cupcake liners inside a cupcake pan. Bake them according to the cake mix box directions and let them cool completely after they are baked.

Once the cupcakes are cool, you’ll use your small round cookie cutter to cut a hole in the middle of the cupcake to fill with spooky sprinkles. You’ll place the top of the cupcake hole back on over the sprinkles to seal the hole back up.

Next you’ll make some of the toppers. You’ll melt down your yellow, white, milk chocolate and pink candy melts in your microwave. Melt them until they are smooth and easy to pour into your silicone molds. You’ll pour the yellow into you mini waffle mold to make the Eggo toppers. You’ll then pour a little bit of pink around the center peak of the donut mold and then the milk chocolate on top of it to make the donuts. You can make these donuts or just get the donut sugar decorations. I did both. Place both molds in the freezer so the chocolate hardens quickly.

Next mix your white frosting with some black food coloring to make the black frosting. You then take the black and red frostings and spread each color one after the other in a piping bag with tips. You can then frost the cupcakes in a rainbow and black swirl like you see below…

Or you can spread the frosting with your spatula, like you see below, with hints of red popping out. This is a more upside down kind of look.

You place your toppers on top to complete the cupcake.

To make the coffee cup toppers you roll some white fondant into a handle and then glue it onto your marshmallow with some white melted chocolate. Let the chocolate dry completely and then you add a dollop of milk chocolate to the top of the cup to make the coffee. Let it harden completely and then place on your cupcake.

You can also easily use donut and mix tape sugar decorations for your cupcakes…

And these icing Christmas Light decorations. You can spell out HELP with you red icing gel. You can also sprinkle some red sugar crystals on the cupcakes too.

All are edible cute Stranger Things cupcakes! When you cut them open a bunch of spooky sprinkles and eye balls pour out. It’s kind of like what’s inside a monster in the upside down! LOL.

These cupcakes were a big hit with my guests!
