Mini Brunch Kabobs & Sandwiches!

The holiday season is here and that means I become the ultimate hostess with the mostest. Every year I host lots of holiday events for my friends and family and this year I’m doing it up right. I can’t wait to make some wonderful and delicious holiday memories with our family. With all our family and friends coming to see the baby this year, I know I’ll have to break out all my favorite brunch recipes to cook up for our guests. I’m thrilled to partner with Farmer John® to showcase some fun recipes using their Farmer John® Classic Pork Sausage Links and Farmer John® Classic Premium Bacon.

Since we’re all about the finger foods and tapas here in California on the West Coast, I wanted to put a little West Coast twist on some fun recipes I normally make for our brunches. Check out these Mini Bacon Egg and Cheese Biscuit Sandwiches and Sausage, Egg, Waffle Kabobs.

They are so easy to make and the perfect finger foods to serve your guests for brunch during this busy holiday season. You want foods you can make and serve easily when you’re super busy, and these do the trick perfectly.

They are made with Farmer John Classic Pork Sausage Links and Farmer John Classic Premium Bacon; both are available at Stater Bros. in the meat department.

I love Farmer John Classic Premium Bacon because it is naturally hardwood smoked and is full of flavor.

I love Farmer John Classic Pork Sausage Links because they are rich in flavor and tender & juicy. They are the perfect ingredients to include in a recipe you’ll be serving your guests this holiday season.

I’m sure they will love munching on these mini brunch bites for the holidays.

Here is how to make each of these brunch treats:

  • 1 8 oz. package of Farmer John® Classic Pork Sausage Links
  • 1 16 oz. package of Farmer John® Classic Premium Bacon
  • 1 package of ready-to-bake biscuits
  • 1 package of Stater Bros. mild cheddar cheese
  • 1 box of mini toaster waffles
  • 1 carton of eggs
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 mini cupcake pan
  • 1 cookie sheet pan
  • Parchment paper
  • 1, two-inch round cookie cutter
  • Holiday themed decorative toothpicks and skewers

 

First, remove the ready-to-bake biscuits from their package and cut them down to 2-inch circles with your round cookie cutter. Then, put them in the oven and bake according to the package instructions. Mine were baked at 350 degrees Fahrenheit for 7 minutes.

Next, cook up your sausage links on the stove top, according to the package instructions.

Cook your bacon. I chose to bake my bacon in the oven at 400 degrees for about 15-20 minutes or until crispy. Tip: To save time, I like to put the bacon and the egg puffs in the oven at the same time (in separate pans, of course).

While this is cooking, add your whole eggs to a mixing bowl with salt and pepper. Scramble the eggs in a bowl with a whisk and then pour them into a well-greased mini cupcake pan.

Bake the eggs for 7-8 minutes at 350 degrees in your oven. Once all your ingredients are cooked, you can start assembling your mini sandwiches and kabobs.

For the sandwich, you just slice your mini biscuits in half. On the bottom half of the biscuit, place some mini slices of cheddar, a warm egg puff, and some pieces of your cooked Farmer John Classic Premium Bacon onto it.

You then put the top of the biscuit onto all the ingredients and stick a festive toothpick down the middle.

For the kabobs, stack mini waffles, egg puffs, and cooked Farmer John Classic Pork Sausage Links together and place a festive skewer through it to complete it.

That’s all you have to do to make these fun and delicious holiday brunch treats! You can make a little brunch tapas bar to serve these to your holiday guests.
