Sweetheart Buttermilk & Strawberry Mini-Pancakes!

Hey All!

We’re back today with another fun Valentine’s Day or Galentine’s Day recipe for you to enjoy with your loved ones or besties this year. Check out these Sweetheart Buttermilk & Strawberry Mini-Pancakes! These would be perfect to make for breakfast in bed for your special someone or they would also be perfect to serve during those Galentine’s Day brunches. Who doesn’t love cute mini heart pancakes? I know I do!

Of course we had to add strawberries, whipped cream and sprinkles to our pancakes. They make everything better!

Here is how to make them!

  • 2 cups Buttermilk Pancake mix
  • 2 1/2 cups room temperature buttermilk
  • 1/2 stick unsalted melted butter
  • Sliced strawberries
  • Whipped Cream
  • Strawberry Syrup
  • Heart-Shaped Cookies Cutters
  • 4 tbsp melted butter

In a large bowl add buttermilk pancake mix, buttermilk, and melted butter. Mix until ingredients are just combined. Over mixing will make your pancakes tough.

Allow pancake batter to sit on the counter until little air bubbles appear, about 10-15 minutes. Trust me. Brush the inside of metal heart-shaped cookie cutters with melted butter and place them in the skillet over med-high heat.

When the oil is hot, add 2-3 tablespoons of pancake batter inside of the cookie cutters. When air pockets begin to form on top of the pancake using a spatula, carefully flip the pancake over. Cook until golden brown. Brush with melted butter and stack on a serving platter,  keep pancakes in the preheated oven until ready to serve.

Stack pancakes, and add whipped cream, sliced strawberry, and drizzle with strawberry syrup.

If you’re serving these to your besties during a Galentine’s Day brunch, pair it with a fun festive cocktail.

These pancakes go pretty good with everything you’ll probably serve at a brunch.

I know I will always love being served a good pancake, especially a cute heart shaped one!
