Fall has arrived and so have all those fun fall flavors. I’m all about the pumpkin flavors this time of year and it was always something my mom always had on hand to make original recipes with. It’s a must have flavor for fall and it usually goes with any ingredients we already have in the kitchen. My mom growing up would come up with some sweet and savory pumpkin recipes using her Crock-Pot® Slow Cooker. It was always inspiring for me to see what she would come up with for the holidays. She would create many holiday feasts with her Crock-Pot® slow cooker and it’s inspired me to do the same today.
This fall season, I’m cooking lots of fun recipes in my own NEW Crock-Pot® Single Hand Cook & Carry® 6-Quart Oval Slow Cooker. I’m always coming up with fun recipes for the holidays with it and I love cooking with it! I can come up with some delicious and unique recipes and cook it all inside my Crock-Pot® slow cooker. It cuts down on the mess I have to clean up and it also allows me to cook with out having to have to stand over a hot stove top. That’s a god send when you have guests visiting for the holidays that you have to entertain. I can spend time with my guests and family while our meals cook. This week, I decided to add a little fall pumpkin flavor to one of our slider recipes! Check out these Yummy Baby Back Rib Sliders With Pumpkin Mayo! They also have delicious caramelized onions on them as well!

Baby Back Rib Cooking and Seasoning Ingredients:
- Crock-Pot® Single Hand Cook & Carry® 6-Quart Oval Slow Cooker
- 3 tablespoons Brown Sugar
- 2 tablespoons Extra Virgin Olive Oil
- 1 tablespoon Onion Powder
- 1 teaspoon Black Pepper
- 1/2 teaspoon Sea Salt
- 1 cup of your favorite barbecue sauce
- 1 slab of Baby Back Ribs
- 1 package of Small Hawaiian Dinner Rolls
Caramelized Onions Ingredients:
- 1 Large Sweet Onion
- 1 tablespoon + 1/2 teaspoon of Extra Virgin Olive Oil
- 2 tablespoons of unsalted butter
- A Pinch of Sea Salt
- A Pinch of Freshly Cracked Black Peppercorns
Pumpkin Mayo Ingredients:
- 1/2 cup Mayonnaise
- 1/3 teaspoon Paprika
- 1 clove Garlic
- 1 tablespoon Extra Virgin Olive Oil
- 2 tablespoons Pumpkin Puree
- A Pinch of Freshly Ground Black Peppercorns to taste
- A Pinch of Sea Salt to taste
First you turn on and heat up your Crock-Pot® Slow Cooker on high.
Brush ribs with olive oil. Combine the spices, and sugar into a bowl and mix well.
Coat both sides of the ribs with the spice and brown sugar mixture.
Place the ribs into the Crock-Pot® Slow Cooker with the meaty side of the ribs up. Slater the top of the ribs with 1 cup of barbecue sauce. Cook the ribs on low for 6 to 10 hours. As the ribs are cooking…
Peel and thinly slice a large sweet onion. Place a large skillet over med-high heat. Add olive oil and unsalted butter. When the olive oil/butter is melted add the onions. Stir onions until they are evenly coated with the olive oil and butter. Allow the onions to get a light brown on the bottom. Turn them over.
Place a tight fitting lid on the skillet for 10 minutes. Remove the lid and cook onions, stirring every 5 – 10 minutes. Cook the another 30 – 40 minutes. Ladle caramelized onions into a serving dish until ready to use.
Once the ribs are cooked, depressurize the Crock-Pot® Slow Cooker, remove the ribs, and allow the ribs to stand for 15 – 20 minutes. Remove the meat from the rib bones. Chop the meat into smaller pieces. Remove excess drippings from the Crock-Pot® Slow Cooker and place the chopped rib meat back into the Crock-Pot® Slow Cooker. Add your favorite barbecue sauce and mix well. You should end up with 4+ cups of rib meat.
In a food processor combine mayonnaise, pumpkin puree, paprika, olive oil, and garlic clove. Pulse ingredients until the mixture is smooth. Add sea salt and freshly ground black peppercorns to taste.
Spoon into a squeeze bottle and refrigerate until ready to use.
You slice the small Hawaiian dinner roll in half, toast the top of each roll to add more texture (optional).
You then build the Baby Back Rib Sliders & Caramelized Onions with pumpkin mayo.
Add chopped rib meat to one-half of the bun. Top with caramelized onion and drizzle with Pumpkin Mayo and serve.
They are packed with flavor and taste amazing!
