Holiday Buffalo Plaid Minnie Mouse Cupcakes!

Hey All!

With Christmas only days away, I wanted to share some fun and easy last minute desserts I had planned to share earlier, but didn’t get a chance to. Heck, better late than never! You can never have too many desserts for the holidays am I right? Check out these super cute Holiday Buffalo Plaid Minnie Mouse Cupcakes! They are the best of Disney and the biggest holiday trend of the season Buffalo Plaid.

They aren’t too difficult to make. If you’re in a bind, you can just get some cupcakes at your local grocery with red icing and just make the fondant pieces to make these cupcakes. They are super easy to make! They are a little more difficult to make if you make them from scratch. But I wanted to give you both options.

Here is how to make them!

Fondant Ears and bow:
1 package of black fondant
1 package of red fondant
1 wilton fondant bow mold
1 mini circle fondant cutter
Wilton Color spray Black
Gingham plaid cookie stencil

Vanilla Frosting Ingredients:
3 C unsalted sweet cream butter, softened
6 C powdered sugar
5-7 tbsp. heavy whipping cream
2 tsp. vanilla extract
1 large piping bag with large star tip
Red gel food coloring
Christmas Holly Sprinkles

Cupcake Ingredients:
1 box of Triple chocolate cake mix
3 large eggs room temp
1/2 Cup of softened unsalted sweet cream butter
1 Cup whole milk
Cupcake liners
cupcake pan

First you make the fondant pieces. Sprinkle some powder sugar onto a cutting board. Roll out the red fondant into 1/4 inch thickness and cut out 48 circles for the ears. You then powder your hands with powder sugar and mold the black fondant into a ball. Pinch off 1 teaspoon size ball of fondant and press it into the larger bow size mold. Make 22 bows and allow to dry overnight.

Next you make your cupcakes:

Preheat oven to 350. Line cupcake pan with the cupcake liners. In a medium bowl, add the cake mix, butter, milk and stir until combined. Fill cupcake liners 3/4 of the way full.
Bake in the oven for about 21 minutes. Pull out the cupcakes and allow to cool before frosting.

Then you make the Vanilla Frosting:

Using a standing mixer combine the butter, powdered sugar, heavy whipping cream, vanilla, and mix on medium speed until combined and smooth. Split the frosting in half into two bowls
Mix in a few drops of red food coloring into one bowl. Scoop the red frosting onto one side of the piping bag. Scoop the white frosting onto the other side of the piping bag.

Next you begin to decorate your cupcakes:

Place two ears onto a paper towel. Place the stencil on top of the fondant circles. Lightly spray the black color spray onto the stencil. Carefully lift up the stencil and rotate it. Spray the stencil again. Carefully remove the stencil and allow the fondant to dry.

Frost cooled cupcakes with the frosting. Push two ears into the sides of the hat.

Place the bow into the top center of the cupcake. Place the ears on the side of the bow and you’re done.

You’ll have a dozen little adorable Buffalo Plaid Minnie Mouse cupcakes  to serve for Christmas.
