I had to do something to celebrate the live action version of The Little Mermaid in theaters now! Check out these Fun The Little Mermaid Minnie Cupcakes!

I don’t know about you, but I’ve been beyond excited for this live action version of The Little Mermaid. With Lin Manuel Miranda involved, I know the added music is going to be fire! To celebrate this release I decided to make some Fun The Little Mermaid Minnie Cupcakes!
They aren’t too hard to make. It all depends on if you make the frosting from scratch or not. Either way, they make a fun The Little Mermaid themed treat to take with you to the theater or to Disneyland when you go to see the movie or the character at the parks.
Here is how to make them:
Mermaid themed Sprinkles
Fondant Ears and bow:
1 package of purple fondant
1 package of green fondant
1 wilton fondant bow mold
1 mini circle fondant cutter
1 mermaid scale stencil
1 can of silver cake spray
Vanilla Frosting Ingredients:
1 1/2 Cup unsalted sweet cream butter, softened
4 1/2 Cup powdered sugar
5-7 tbsp. heavy whipping cream
2 tsp. Pure vanilla extract
1 large piping bag with large star tip
1 medium ice cream scooper
Or you can buy already made Vanilla Frosting.
Vanilla Cupcakes: (Makes 22 Cupcakes)
1 box of french vanilla cake mix
3 large eggs room temp
1/2 Cup of softened unsalted sweet cream butter
1 Cup whole milk
Cupcake liners
Cupcake pan
Start to prep for the cupcakes by rolling out the green fondant into 1/4 inch thickness and cut out 48 circles of the green fondant for the ears and set aside to dry out overnight.
prinkle some powder sugar onto a cutting board. Powder your hands with powder sugar and mold the purple fondant into a ball. Pinch off 1 teaspoon size ball of fondant and press it into the larger bow size mold.
Make 22 bows then set aside to dry out overnight.
The Next Day, Using the mermaid scale stencil place it on the top of two of the green fondant circles.
Lightly spray the silver cake spray onto the top to give a mermaid scale effect once you remove the stencil.
Repeat steps until all green circles have been sprayed and allow to dry.
Then move on to making the cupcakes and frosting.
Preheat oven to 350 and line a cupcake pan with the cupcake liners.
In a medium bowl, beat the cake mix, eggs, butter and milk until smooth and combined.
Fill cupcake liners 3/4 of the way full.
Bake in the oven for about 21 minutes.
Pull out the cupcakes and allow to cool before frosting.
Using a standing mixer combine the butter, powdered sugar, heavy, whipping cream, vanilla and mix on medium speed until combined and smooth.
Scoop 1 Cup of frosting into the piping bag.
Using the ice cream scooper, scoop out a small amount of frosting onto the top of the cupcake.
Use a knife and spread the frosting into a thick disk and coat the frosting in the mermaid sprinkle mixture.
Pipe a dollop of frosting into the middle and carefully place a purple bow in the center of the frosting.
Carefully place two mermaid scale “ears” on the sides of the bow.
Pack some up to enjoy as you go see the new Little Mermaid in theaters now! Can’t wait to see it!
