I have one last little fun thing you can do to make St. Patty’s Day all the more festive. You should make a Mini Rainbow St. Patty’s Day Cake! Yep! Rainbow cakes are a must for Saint Patty’s day. You’re kids, family, and those pesky Leprechauns will love you for it. My recipe is as usual easy to make and now thanks to those Funfetti colorful Baking Mixes it’s even easier to do! You don’t even have to waste time dying cakes color with food coloring. They come already colored for you. I’m in love with these things! It cuts down the process so much and I’m buying them by the bucket load. I digress…
Here is the Mini Rainbow St. Patrick’s Day Cake Recipe to make these Rainbow Cakes For Saint Patty’s Day!
- 1 of Each Red, Green, Blue, Yellow, and Purple Funfetti Cake Mix Pouches
- 10 Egg Whites
- Vegetable Oil
- Water
- 1 of Each Colored Matching Frosting Red, Green, Blue, and Purple
- 1 Whipped White Frosting Container
- Shamrock Sprinkles
- Gold Sprinkles or Sugar
- 1 Chocolate Gold Coin
- Mini Cake Pans
- Pam Cooking Spray
- Spatula
- Cookie Sheet
- Combine ingredients as directed on the mixes bag. They each use vegetable oil, water, and 2 egg whites. Once mixes are done add each to it's own bowl.
- Grease each mini cake pan with Pam Cooking spray so the cakes don't stick to the pans. Place pans on top of a cookie sheet as the small pans I have kind of leaked a little.
- Once cakes are done let them cool for 10 minutes then cut off any rounded tops so they are all flat even cakes.
- You then begin stacking each cake spreading matching colored frosting. I started with blue first, then green, purple, red, and yellow is the top layer with a dollop of white whipped frosting at the top.
- You then decorate with sprinkles and top with the chocolate gold coin! Serve and enjoy!
I like to always include visual steps with my recipes so you can see how I divided my colored cake mixes in bowls.
I mixed them all inside each bowl with my Kitchenaid mixer.
These are the pans I got on Amazon to bake them it. They are called Wilton Mini Springform Pans. They do leak a tiny bit of the batter out, but if you put them on top of a cookie sheet they are fine. It leaks out like a few drops. Nothing that caused any issue with the cakes.
The mix says to bake 20-23 but I found all the colors but the red and blue were done in 20-22 minutes. The red and blue were done in like 23-24 minutes.
Then I began stacking the cakes layer by layer, color by color.
I then topped it with shamrock sprinkles and gold sugar sprinkles which I got at bakerspartyshop.com. And then finished it off with a chocolate gold coin. Boom Cuteness!
