Daisy Disney Bound Minnie Cupcakes!

Hey All!

I know it’s been some time since my last post, but I’m getting back into the groove and found inspiration again. I was seriously lacking inspiration since the beginning of the year and then all heck broke out with this pandemic and everything else. It’s taking me a while to get myself together and find joy again. Once I began to find joy again, the inspiration to create just came back. So I’ve got lots of Disney, Shark Week, Halloween and the Holidays coming up! There will be lots of fun things coming in the coming weeks, so stay tuned! We’re kicking off today with these adorable Daisy Disney Bound Minnie Cupcakes! They are the perfect little Disney themed treat to make at home and dream about the parks with. We can’t make it to the park to get some treats, so we can make some at home.

They aren’t too difficult to make, but they do take some time to make. Here is how to make them:

Fondant Ears and bow ingredients:
1 package of white fondant
1 package of purple fondant
1 package of yellow fondant
1 wilton fondant bow mold
1 Daisy floral fondant plunger
1 mini circle fondant cutter

Cupcake Ingredients (Makes 22 Cupcakes):
1 box of french vanilla cake mix
3 large eggs room temp
1/2 Cup of softened unsalted sweet cream butter
1 Cup whole milk
cupcake liners
cupcake pan

Vanilla Frosting Ingredients:
3 Cup unsalted sweet cream butter, softened
6 Cup powdered sugar
5-7 tbsp. heavy whipping cream
2 tsp. vanilla extract
1 large piping bag with large star tip

First you make the cupcakes and frosting. First you preheat oven to 350. Line cupcake pan with the cupcake liners. In a medium bowl, add the cake mix, butter, milk and stir until combined. Fill cupcake liners 3/4 of the way full. Bake in the oven for about 21 minutes. Pull out the cupcakes and allow to cool before frosting.

Sprinkle some powder sugar onto a cutting board and roll out the white fondant into 1/4 inch thickness and cut out 48 circles of the white fondant for the ears and set aside. Roll out more white fondant into ¼ inch thickness and use the small and medium daisy fondant plunger to cut of floral pieces. Set aside to dry. Powder your hands with powder sugar and mold the yellow fondant into a nerd candy size ball and set aside allow to dry.

Using a standing mixer combine the butter, powdered sugar, heavy whipping cream, vanilla, and mix on medium speed until combined and smooth. Scoop the white frosting into the piping bag with tip of your choice.

Then you move on to making the floral decorations. Dip your finger into a cup of water and lightly dab it onto the back of the small daisy fondant piece. Place it into the middle of the bigger daisy. Carefully dab a small amount of water onto the yellow ball and place into the center of the daisies. Allow to dry for a few hours

Dab a bit of water onto the side of one of the white circles. Place the Daisy on top of the ear. Allow to dry for a few hours. Powder your hands with powder sugar and mold the Purple fondant into a ball. Pinch off 1 teaspoon size ball of fondant and press it into the larger bow size mold. Make 22 bows.

Lastly you assemble your cupcakes. Frost cooled cupcakes with the frosting. Place purple bow into the center of the frosting. Place the ears on the side of the bow and you’re done! How cute are these cupcakes folks!
